Apple Cinnamon Baked Oatmeal

Let’s say this together…I love fall & winter food. This oatmeal is the quintessential cold weather breakfast. Make up a big batch of this and you will never need to grab one of those overly sweetened little packets of instant oats again. Besides if you are like me then you want to taste all of the full bodied flavors of the oats, fruit, cinnamon and spice. Not just sugar and quick cooked overly processed oats.

Lately oatmeal has been in the spotlight over here. MyΒ Saffron Pear Baked OatmealΒ was such a hit I had to post a follow up recipe. This time the traditional flavors of apples and cinnamon take the stage. Choose your favorite crispy apples. We love Pink Lady’s, Granny Smith, Honey Crisp and Gala.

Pomegranate seeds are a delight to photograph and to eat. You will be seeing them garnish many recipes over here. They also hold their own in may of my recipes including my Pomegranate Coconut Shake with Cacao Nibs and Coconut Crusted Chicken with Pomegranate Dipping Sauce.

They are also mighty tasty in my Sweet Potato, Bacon and Pomegranate Spinach Salad.

We have been enjoying busy school days and fabulous weekends. We are a family who loves a little chill in the air and we spend plenty of time outdoors. I love this photo of my kids spending a lazy Saturday watching grandma’s iPad in a cozy white bed.

Watching them cuddled up next to each other is priceless.

I always love to style things like oatmeal and more bland colored foods like chili. It is all in the toppings and garnishes. And then the light factor comes into it.

The perfect light makes everything dazzle and shine….

Do not be shy…go ahead and heap on your favorite seasonal fruits, nuts, raisins and such. Pecans, walnuts, slivered almonds, macadamia nuts. They all add healthy fats and some nice crunch. Recently I have been using a lot of my favorite Marcona almonds from Trader Joe’s.

Those almonds are wonderful to top your oats or to munch out of hand.

Ready to bake up some oatmeal? Beware your house will smell heavenly. The other bonus: you will have a healthy breakfast that is ready to grab and go for a few mornings. This is great for mid day snacks too. Remember my 10 Secrets to Skinny post?

  1. I would love to try the No Bake Chocolate Peanut Butter Cookies recipe. Cookies are big in my house as is the combination of chocolate and Peanut Butter.

    I would love to win the subscription because I love cookbook and reading cooking magazines. I do not have a subscription to any but I will look through at the library. I love to find new foods that I can make for my family.

    1. Rachel, think I used to have Cortland apples when I was a kid back in NY. I need to find them again .I believe I loved them. I think they are often used in cider too…

  9. I have tried many of your recipies but while we are on the topic one of my favorites were your thai spiced fries. I didn’t get them very crispy but next time Im going to try a coating of potato starch to help. Loved the flavor crispy or not!!

  12. Love the classic apple cinnamon combination. The nuts and pomegranate seeds must add some nice crunch! I haven’t baked oatmeal yet, but I’m thinking I need to try it. Sounds like the perfect breakfast for company over the holidays.

    You definitely know how to spice up oatmeal and you are right – it is such a wonderful start to the day and if you do it ahead, its so easy! I have a bowl just about every morning for breakfast … amazing how it really fuels your morning!!

  22. Oh my, this is so good! I LOVE baked oatmeal and have been making it different ways for a few years now, but this recipe is just so tasty. I lOVE the addition of coconut milk it adds a nice creaminess. YUM πŸ™‚

My family hates oatmeal and I’m not really looking forward to eating the same 8 days in a row πŸ˜‰ I wanted to divide the ingredients by 8, but is it possible to leave out the coconut milk (which won’t be that much anymore) and use milk instead?
