Nutty Apple Tarts – Gluten Free & Vegan

There has been a wispy bit of cool air blowing around here in the San Juan mountains. With the crispness in the air I get really excited for fall and of course my favorite season winter. Flavors that swoon include apples, cinnamon and pumpkin pie spice. I created this Nutty Apple Tart with cool days in mind, but it is equally as good in the heat of the summer.

What is not to love about a tart loaded with apples, fruit jam and nuts? Have you ever tried St. Dalfour Fruit Conserves? They come in every flavor you could possible imagine and they are 100% fruit, have no added sugar and no preservatives. Trader Joe’s had great 100% fruit jams too. Love that.

You know what I also love? Bob’s Red Mill…..they have every high quality flour, grain, pancake mix, etc. you could possible imagine. They are easy to find too. If you can’t find these products locally, then you can easily order online. Or win my giveaway…..

I made sure this tart was gluten free to0 so everyone can enjoy it. It is also vegan, even cooler huh?!

This tart has the texture of a Linzer tart cookie and layers and layers of flavor. Linzer tarts use nuts and flour as a base for the cookie, so it makes sense that my creation would have a similar flair. We are nuts about nuts over here. I used a combo of pistachios & pine nuts as a topping.

Using quinoa, oat and almond flour gives a great dimension of texture and flavor. I first learned about blanched almond flour earlier this year from Elana of Elana’s Pantry. She knows a thing or two about great food. Almond flour is addictive in baked goods. It is buttery, rich and bakes up perfectly. The good thing is it is also good for you.

Think of this recipe like a sweet pizza, layer it with the fruits, nuts and jams of your choice. Whatever you have available should be perfect. You can play around with the flours too. Have you ever noticed that tarts can be made in so many different ways? Some have creamy tops, some fruity, some have crust on the top and bottom, some are pop tarts. Any which way they are great. Just know that I enjoy this tart often for breakfast, lunch, brunch and snacks. A little piece satisfies in a big way.

  1. I would use these products in everything. I’m a huge buyer of Bob’s Red Mill products, especially the whet bran and the almond meal. Their new granola is good too. I wish they came out with some peanut flour!

  2. We live on an orchard and our apple harvest has just begun so I was excited to see this recipe! I am always looking for something new to do with Apples! Although, cobbler or crisp is my favorite!!

    1. Hanna, that is so cool to hear. Cutting out wheat is not as hard as people think. At first a bit tricky & then a whole new world of great flavors open up. Not to mention great health if gluten intolerant.

  32. There are mainly 2 reasons why I want Bob’s Red Mill’s products in my life.

    First, I want my family to eat healthier than how we are now. With Bob’s Red Mill’s products, that would be a big help and make reaching that goal easier.

    Second, many of my friends are now on gluten free diets. Quite a few are vegans too. It had been a challenge for me when we have gatherings and I need to come up with different dishes that everyone can enjoy. 🙂

    1. Tiffany, at the beginning it might be a bit confusing to go gluten free. After you get the hang of it, not a big deal at all. You will not miss the gluten products one bit 🙂

  39. I recently bought a bread machine book with over 300 recipes. There are a lot of extra ingredients that are produced by Bob’s Red Mill. My husband is totally spoiled and won’t eat “store bought” bread anymore. I make him a loaf to take to work and he makes sandwiches all week.

  40. I am currently on the elimination diet in order to feed my miracle daughter my breast milk. Therefore, i can’t eat gluten. Also, I have a corn sensitivity, so I love using the Arrowroot powder for making my own corn-free baking powder and for making “powdered sugar” with Arrowroot and powdered stevia! I love Bob’s Red Mill, and me and my girls live on their 10-grain pancake & waffle mix that we love adding fresh fruit to for the yummiest pancakes. I’ve been recently buying the almond flour as well, as I venture into the world of french macarons! 🙂

  43. I’ve been needing to experiment with making my own pizza crust – The organic, pre-made, pre-cooked, packaged stuff is about $5 a pop for a 12in crust! Yikes.
    I would love to spend a Sunday playing in the kitchen with pizza dough with help from Bob’s Red Mill 🙂

My favorite thing to bake are tarts – I make the crust with almond flour and sometimes a bit of coconut. The filling is often a cream filling made with coconut cream and I top it with seasonal fruit.

  57. I’d like to try their almond flour (haven’t yet) as well as their Masa Harina. I started making my own corn tortillas because wheat flour tortillas don’t agree with me any more. (Gluten intolerance? Not sure yet.) But I’m thankful for quality products like these and quality recipes like yours!

    1. Thanks Kimby! Not sure I have ever had Masa Harina. Is it corn flour? Gosh, Bob’s makes everything. You gotta try the almond flour. Not only GF, but the flavor is awesome & you can use it for so many things. I also love that it is great for low-carb diets.

  59. Marla! That tart is GORGEOUS!!! Oh, gosh….Bob’s Red Mill. What wouldn’t I like to try. I’m always baking and love to look at the specialty flours that Bob’s offers, but don’t buy them often. I’d definitely love to experiment with some Tapioca flour and Almond meal!

  60. This is a great post. I love using Bob’s Red Mill flours in all my baking and cooking. I would however like to state a very important fact that those allergic to Gluten, like my son, cannot eat oats. Oats is not a gluten free grain. However, I notice that one can now buy gluten free oats. I would love to know how they get oats to suddenly be gluten-free?

  64. This looks so delicious, do you have any idea how to substitute sugar for the stevia? Most people don’t realize stevia is related to ragweed, a problem for those of us with ragweed allergy.
