Happy Monday! I’m so excited for my great pal Georgia Pellegrini. Not only does she lead ladies on the finest of outdoor adventures….but she also has an amazing new cookbook/lifestyle manual called Modern Pioneering.

I’m a really big fan of meaty, protein packed meals. In this case it was really easy to go without the meat.

This cauliflower is hearty, full of flavor & will give you tons of sustainable energy for skiing, hiking, mountain bike riding & active projects. The cauliflower steaks are softened in the oven then sautéed in butter. Then they are dressed with a mix of olive oil, toasted pine nuts, golden raisins and fresh parsley.

They look super pretty to!

I promise you will not miss the meat in this healthy, meatless meal. I served ours with rainbow quinoa (my favorite!) this makes it a full, well rounded meal.

Another thing that perfectly rounds off this meal is a glass of fruity Rosé. Yep.

  4. Marla, what a gorgeous recipe. We grew up in a much smaller town than I do now… which is still considered a small town. But, I ride my pink bike all over with my boys. I hardly drive my truck unless I need to go down the canyon. But, that’s how it always was growing up, if we wanted to get somewhere, we walked. I’m basically known around town as the blonde on the pink bike. Have a blessed day. 🙂

  6. I just saw her book yesterday in Barnes and Noble and fell in love! SO beautiful and these cauliflower steaks are right up my alley.

    I channel my inner pioneer by recreating/reinventing all of the foods we used to love before we found out we had to go gluten free. It may sound silly, but using all of these new ingredients and new techniques is pretty much like navigating uncharted territory. I mean come on, my Mom’s a pastry chef. Having to go gluten free was a mind warp on a lot of levels. Ha!

  11. Love this presentation for Cauliflower!! Lived on a remote Ranch for many years and felt very blessed to raise my daughter well beyond the sidewalks. We still Upland Game Bird Hunt here in Eastern OR and put on a Seafood Buffet on the first night of Pheasant Camp!
