There have been so many awesome recipes passed around the internet the past few weeks in preparation for the beginning of the football season. Do I even know who is playing, no. Do I know what I will be eating, sure. This Chicken with Coconut-Lime Peanut Sauce is a fun alternative to chili. It is packed with flavor and protein. Great for game day or any time at all.

When it comes to spectator sports it is all about the food for me. Whoever wants to stand on the side lines to chat and eat can hang with me. In this chicken recipe creamy coconut pairs perfectly with peanuts and lime. This dish is filling, but not heavy. if you are a fan of peanuts, you will love this sauce!

I added some bright green asparagus. Not only does it add flavor and great texture, you get your veggies too. Serve with some brown, jasmine or basmati rice and you have a full meal. You can make a double batch of sauce if you wish. It would be awesome to dip freshly baked bread or naan in it.

    1. Faith: You are so right-perfect choice of words. The lime does help “brighten” the flavors in this dish. We would have a blast “watching not watching” the Super Bowl together. Are you guys still living close to Syracuse, NY?? I will be speaking there the end of March and would love if you could come visit….

    anything makes it taste wonderful. Can I get all this at the local
    trader joe’s or do I have to go to an Asian specialty store for the
    fish sauce? Love Thai food, so I will love this.

  4. I just did Faith’s smoky chili soup with lime and the lime
    did make ALL the difference. The lively little soup just danced! I
    adore all the flavours here and you are so right, Marla – this is
    the perfect dish to go with all of the Superbowl nibbles… Of
    course, it is not really a big deal up here. Some watch it – but I
    am amazed at how the entire country seems to stop everything down
    there and “watch the game”. There is nothing like it… 🙂

  8. Marla I love all the colors and the flavors of this dish. It looks and sound delicious. And the peanut ,lime, and coconut sauce…yum!
    And don’t worry I had to ask my husband who was playing in the game too. I could only remember one of the teams but not the other. I’m so not a NFL football fan but I have to admit I’ll watch the Superbowl.

    1. Liz: I shoot with a Canon EOS 10D. The past few months I have been shooting with my new 24-70 lens & I love it. This Coconut Chicken was shot with my wide angle lens, a 17-40. That thing needed a lot more post production work-it is a slower lens/less light. More info then you probably thought you would get! LOL

  11. I’m gonna be honest, I’m making chili on Sunday but I would much rather be eating this. Unfortunately, my father “doesn’t like peanut butter for dinner”. How I could have been borne of his loins…no idea. Instead, I think I may need to make this on Monday. To recover from the chili.

I have this to try in the middle of the week – wonder how it’ll taste over a salad tossed with peanut oil and some rice vinegar?

    1. Kim: The beer is so easy! Sure, I would go ahead and make this chicken during the week. I have enjoyed it many times over a fresh salad (baby spinach.) I don’t even use additional dressing, but I like the idea of peanut oil & rice vinegar, or even toasted sesame oil.

  15. This is a Keeper! Just made it for dinner and I am so glad! The only things I did was make a little more chicken and added more cayenne and some chili oil. (We like it hot!) and left out the cinnamon. My friend said the asparagus, while it seemed an odd addition to me, was a perfect addition. I agree that crunchy peanut butter is the best!!! Thank you for the recipe!

    1. Jeane: I am so happy you enjoyed my peanut chicken recipe. Love that you went with the asparagus and were happy with the choice to use it. The chili oil is a great addition and can be added per serving – I would love it and my kids would probably think it was too spicy.

    1. Shari, I say go ahead & try the almond butter. I love all nuts so I can’t see how you can go wrong with that. You know what else would be tasty…cashew butter. Hmmm. Now I need to try both of those.

    We tried this recipe and it was a hit with my family (especially my husband), but once I started to heat the sauce, it became really thick and sticky (I know normal for natural peanut butter). Have you ever had this happen and if so what should I add or cut back on to keep the flavours. Thanks for your help (and wonderful inspiring web-site)

  18. Could you make this in the slow cooker? Maybe pour the sauce over the chicken breasts and cook on low. Then shred the chicken at the end? Or will it overcook?

  21. I was looking for a recipe that would allow me to use what I had in-house already. Had 1/2 a can of coconut milk, 1/4 cup of pb and, amazingly, I had frozen cut asparagus. This was soooo good. The only thing I would probably change is marinate the meat in the sauce for a while. Then cook the sauce down to make sure there is no bacteria. That would help marry the meat to the sauce. I made a cauliflower rice to go with it. Will definitely make this again.
