I bought a jar of Organic Sesame Tahini a while back with the thought of making some hummus. Instead of that I went with this creamy cauliflower dish. I am not a huge fan of mashed potatoes but I love when a similar kind of mash is done with cauliflower. The tahini (sesame paste) gives this dish great flavor and a little bit of healthy fat to satisfy. I bet I could convert the biggest mashed potato fans out there.

I use this purée as a bed under my lean protein with a side of steamed veggies. A balanced, clean, healthy and superb meal!

Benefits of Cauliflower

Cauliflower is low calorie and nutrient dense. It has loads of vitamin C. Just like Brussels Sprouts, Cauliflower is a cruciferous vegetable filled with phytonutrients and antioxidants. Research also suggests that adding Cauliflower to your diet helps to detoxify your liver. Sounds like a great all around super food to me!

Curry Cauliflower Puree with Tahini

makes 4 servings

INGREDIENTS

  • 1 head Cauliflower, washed, trim off stem and leaves, roughly chop florets
  • 3 tablespoons Tahini Paste
  • 1 cup Chicken or Vegetable Broth
  • Curry Powder (use to taste, I sprinkled some over the top without measuring)
  • Salt and Pepper to taste
  • Optional: Sprinkle some pieces of Nitrate Free Bacon or Toasted Nuts on top

METHOD

In medium saucepan add Broth and Cauliflower. Bring to a boil and then simmer partially covered for about 10 minutes, until cauliflower is tender. With slotted spoon add Caulifower to blender or food processor, reserving cooking liquid. Purée until smooth. Add some reserved liquid to thin out if necessary. Add Tahini. Sprinkle salt, pepper and curry powder over top and puree a few seconds more until all is combined. Taste and make any seasoning additions.
