Funny thing is though I have never posted brownies here on MarlaMeridith.com until today. These beauties are from the amazing new cookbook by Elana Amsterdam…Paleo Cooking from Elana’s Pantry: Gluten Free, Grain Free, Dairy Free Recipes.

They are bursting with chocolate & you will definitely not miss the flour.

What makes these brownies unique (different from other grain free recipes) is that it doesn’t even have the blanched almond flour typically used.

By some kinda magic (I think it’s the eggs) these brownies rise perfectly & have a lovely crumbly texture.

This pan did not stick around long at all. Nope. We all fought over each & every crumb.

What does that mean? I need to make more really soon. Like today.

    1. Depending on where you are you can find it at whole foods. I’ve also seen it at tj maxx/winners/home goods/home sense. Hope that helps!! 🙂

  5. This is a fraud. Elana would never have a recipe with vegetable shortening in it for Paleos. Omega 6 oils in vegetable oils are not healthy.

  7. Is there something I can use in place of coconut sugar? I’ve never heard if it and not sure where to find. I also don’t like to buy specialty ingredients that I have no other use for… (I’m not into paleo, but these still look yummy, and I can share with my paleo-following friends.)

  8. the only sub i made was butter otherwise i used the exact amounts of everything, they did not crackle at all but they taste good.

  9. Hey Marla 🙂 I just wanted to say thank you for the recipe. We made them tonight as a first bake for my new mixer (I got my first ever KitchenAid mixer!!) and they were amazing! I used coconut oil instead and my crackle was gorgeous just like your photos :). Loved these; they’re on their way to almost finished already!

  11. I just mixed these and they’re in the oven now. Seemed like a lot of eggs! Substituted coconut oil for shortening.
