Not sure about you guys, but geesh have things been busy around here. Weekdays and weekends are full of outdoors fun. Between the excellent skiing & my visits to North Rim Hunt Club….it is rare that I am home.

 

Being in the house to cook usually happens aprรฉs ski. I enjoy winding down while buzzing around the kitchen. Meals need to be simple, healthy, delicious and at the ready at all times. Toasted pine nuts are gonna up the anti for this pasta. If you don’t have these, use another nut. Chopped walnuts and pecans would be great too.

  1. It sounds as though you are thoroughly enjoying your new home, Marla…so happy for you! This salad sounds like something I could happily munch on all day, and I absolutely adore that photo of the broccoli in the little satchel.

  2. This is going on the menu plan for the week, Marla. Great flavor and texture combination; we love all of these ingredients!

    In summer I do an orzo pasta salad with plenty of lemon zest, cherry tomatoes and artichoke hearts. It’s fresh and always disappears fast!

  3. Looks fantastic, Marla! Roasting vegetables is my favorite way to prepare them. They are indeed just as good hot as they are at room temperature or straight from the fridge. I like to make a big bowl of soup or salad to have in the fridge for those days that we’ve been skiing all day and need a quick, healthy and filling snack or meal. Hope you’re well!
