Pumpkin Mac ‘n Cheese

There are two very exciting things to share with you today. First of all, Pumpkin Mac ‘n Cheese needs to find it’s way into your life instantly. Secondly, I am thrilled to share Calphalon Your Set with you. What does “Your Set” mean? Well my friends, the tough decisions of trying to find the perfect set of pans has now been solved. Calphalon has launched Your Set! The perfect way for you to customize your set of pots and pans to suit your fancy. And for me to suit mine.

In the wonderful world of cooking there is no one size fits all.

What might be your mom’s or your best friends favorite pan might not be yours. That’s OK. Now you can take charge and get exactly what you want. With Your Set, you get to choose from a selection of Calphalon Unison Nonstick pans (that is what is in my photos) or their Accucore Stainless Steel pans.

For this super quick mac ‘n cheese I didn’t want anything stuck to the bottom of the pan & I wanted to work really quickly. The nonstick pan was amazing for this. This meal came together with ease. There was only some residual oil left in the pan. All I needed was a damp cloth for clean up. The nonstick coating also allowed me to keep this recipe low fat.

You will be pleased how easy this pasta is to cook. Especially when you have little ones tugging at you for lunch or dinner. All you need is 5 ounces of cooked pasta. Gluten free, whole wheat, corn, quinoa, high protein…the choice is yours. Cook that pasta in a pot of lightly salted boiling water.

Have Your Set pan ready to go…what’s next is quick, simple and makes the whole dish come together. Heat your pan over medium high heat. My Calphalon 10″ nonstick Unison pan was the perfect choice for this (as it will be for omelettes and many things.) Add some pumpkin purée, creamy sour cream, pumpkin pie spice, cinnamon and cheddar cheese. You will love that there is virtually no clean up too ~ as everything is cooked in this one pan.

  1. Love this giveaway (and the Mac n cheese looks amazing)! My favorite thing to cook is pasta because it is so versatile and can be prepared so quickly.

  2. My favorite thing to cook? Too many things! I guess I like to cook anything that is simple and one pot. If I can’t throw a dozen ingredients in one pan and just mix them together, it’s too much work. 🙂

  3. I love cooking foods with lots of different colors and textures! Like Whole Wheat pasta with tomatoes and basil! YUM!

  4. My favorite thing to cook is stew. I love the way the food blends and makes the house smell. Makes me feel comforted.

  5. Favorite thing to cook? What a tough question! Maybe it’s because of this amazing mac & cheese–but mac & cheese comes to mind! And of course popcorn, but I don’t think that really counts as cooking. 😉

  6. Oh, your recipe looks fabulous! I love to bake (everything) and love to cook veggies with salmon! Happy holidays! @littleislandstu

  7. My favorite things to cook … notice things, because I can’t pick just one … is soups … comforting … pasta because it’s versatile and grilling because I luve Bubbaq.

  8. Ooh – creative and simple! Would never have thought to combine the pumpkin with cheese, but it sounds great!
My favorite thing to cook is veggies, some form of cheese and pasta, so this will be a great variation on that… and that new Calphalon set sounds great! My old Calphalon non-stick has been with me since college and really needs to be replaced…

  9. I never would have thought to put pumpkins and cheese together. But it sounds delicious!

I more of a baker so for me it’s a batch of sugar cookies! I’m always baking.

  10. Oh gosh, how could you pick just one thing? I guess what gives me the most pleasure is my Christmas cookie and candy trays because everyone looks forward to them all year. Nothing better than having family and friends enjoying the fruits of your labor!

  11. My favorite thing to cook is soup… Usually don’t use a recipe, just craft one, different every time, and my husband’s favorite thing to eat!

  12. I love making pancakes! I enjoy making them from scratch and finding all the different things I can add. 🙂 (plus I really love melted butter and syrup together haha)

  13. It’s hard to pick a favorite. Lately I’ve been adding Dutch pancakes to the dinner rotation on a weekly basis. We love them with carmalized apples or blueberries and topped with maple syrup. Bacon or sausage on the side is great too. Dutch pancakes are a warm winter comfort meal!

  14. My favorite thing to cook is probably any sort of veggie heavy main dish. Even though I love meat, veggies, with all their colors, look so pretty.

  15. Love trying new recipes for macaroni and cheese! We could eat it every day (and sometimes do)! Need a good pan to cook it in. Thank you for such a great blog, you have wonderful, delicious recipes.

  16. Anything that my kids will actually eat! Mostly anything simple and real. A nice roast chicken with some roast potatoes and may e some asparagus.

  17. My favorite thing to cook is pasta. I love the versatility off it. You can change a dish completely by changing one aspect!

  18. Favorite thing to cook? Too many! My family do love my lasagna, though. I’ve recently done stir-fry with chicken that my family loves.

  19. This sounds scrumptious, can’t wait to try it. My favorite thing to cook is this pasta with a garlic gravy sauce. I add chicken, Parmesan cheese, and grape tomatoes to a garlic gravy sauce seasoned with fresh herbs. I haven’t found anyone who doesn’t LOVE it!

  20. I love roasting veggies because it is hands off, makes the kitchen smell good, and everything tastes phenomenal!

  21. I just used pumpkin puree and ricotta cheese (made from hemp seed– lactose intolerant around here) and fresh cranberries for the cookies you had posted here from sometime last year, I think. Wonderful fun! But I love to cook everything I can get my hands on. Exploring ingredients is a world of fun.

  22. I love everything about this marla!! It looks absolutely amazing. And thank you so much for the link back 🙂 you are way too sweet! And great giveaway. I have horrible pots and pans right now! I love baking most but my favorite thing to cook is probably Mexican food. So tasty!!

  23. My husband I cook anything and everything
Sadly my pots and pans need to be tossed they are old and don’t work very well. So cleanup is a chore

  24. I LOVE baking more than cooking so I don’t really have a favorite thing to cook but I guess I do like finding different ways to prepare/cook chicken.

  25. It’s hard to pick one favorite thing to cook.. but one of them would definitely be some homemade tomato sauce! Why can’t tomato season last all year?

  26. I am not a huge mac n cheese gal; however, this version looks very tasty and I think it will be on the menu this week.

I love cooking chicken especially with mushrooms.
    Happy Thanksgiving!

  27. What an amazing giveaway! I would so love some nice pots and pans. I would love to cook a spinach and onion omelet in that nonstick pan!

  28. I love pumpkin and I love mac and cheese, just never married them. Maybe I should perform a ceremony! Awesome giveaway by the way.

  29. My family loves this pasta dish that I make regularly.. no recipe really, I just brown up cubed pancetta, then cook some diced chicken breast in the leftover fat, add smoked sun dried tomatoes, some baby spinach, a little white wine, some lemon juice and zest.. can thicken the “sauce” with a bit of chicken stock and cornstarch. season up with some fresh ground pepper, a pinch of salt and some chopped parsley. serve with fettucine (i like to use the lemon pepper flavor if i can get it)

  30. I absolutely LOVE Calphalon products. They have the best quality and last a lifetime. I think I’d use their Unison Nonstick-Slide 12″ Omelette Pan the most. But all of their pots and pans are essential for anyone who likes to cook a lot, like myself! I’m a newlywed and just bought my first home with my husband, so this would be very nice to win.

Have a wonderful thanksgiving. Thanks for the recipe, too!

  31. This is a really fast and delicious sounding recipe..perfect for sneaking in some nutrition and perfect for the lunchbox as well..definitely must try!

  32. This Mac n cheese reminds me a bit of butternut squash ravioli or lasagna – could also try adding some sage to it – will definitely have to try this.

  33. I normally am not a fan of Pumpkin flavored things, but this looks amazing! I am a HUGE fan of mac and cheese. I am thinking of giving these a try!

  34. I absolutely love to make seafood paella because it reminds me of the amazing family holiday we recently had in Spain. It is a delicious dinner and perfect for lunch the next day too which is a bonus!

  35. My all time favourite thing to cook his homemade pizza – quick, easy, healthy and delicious – brilliant! It’s also alot of fun to make 🙂

  36. I know it technically is baking, but my favorite thing to cook is peanut butter cookies….they are ridiculous! My favorite thing to actually cook is black bean soup.

  37. I love to cook pasta! Thank you for the opportunity to win these amazing pots and pans! My pots and pans are wore out and they worry me with the coating coming off. These would be an amazing blessing to my family!

  38. My favorite thing to cook changes everyday…but I enjoy anything new as well as/just as much as putting smiles on my family’s face…:-)))

  39. My favorite thing to cook would be tacos de lengua de res. Takes almost all day to cook the meat, but it is oh so worth it.

  40. I love throwing things together to make quick and easy meals. Normally it’s a grain – lately quinoa, squash, onions, peppers, some protein, and a good healthy dose of seasoning and something for a little ‘sauce.’

  41. I made this with dinner tonight. I didn’t have the cheddar cheese so I used a little less than a 1/4 cup of fat free ricotta cheese and it came out amazing. I am not a fan of ricotta cheese at all but with your recipes I have branched out so much with my cooking and ingredients. I had this with chicken I made and it was delish.
Thank you again for such amazing recipes. I do find myself getting bored with “normal” everyday meals so I try and mix it up a bit. Tonight I made the chicken and added 2 tablespoons of thousand island dressing towards the end of the cooking and it browned up so nice. Tomorrow I am making the cinnamon cake and for breakfast on New Years Day the crepes. 🙂

    1. Hi Dawn!! Thanks so much for your sweet comment. It really thrills me when I can make people’s lives a whole lot tastier. Using ricotta was a smart idea and one I will certainly try. I always have some in the house ~ it ends up in so many recipes. I hope you have great success with the other recipes. Can’t wait to hear what you think 🙂 Happy New Year!

  42. Maybe there is something wrong with my browser, but I don’t see a recipe in this post. Is there supposed to be a recipe link here?
