Recipe: BLAT Tacos (Bacon, Lettuce, Tomato, Avocado)

These tacos are perfect for entertaining and busy weeknights when you need a healthy & delicious meal on the table super quick.

 4 slices bacon, cut into bite sized pieces
 1 cup cherry or grape tomatoes, halved
 2 avocados, cut into cubes
 splash of lemon juice
 salt and pepper to taste
 a few handfuls mixed greens
 mayonnaise
 4 corn or flour mini tortillas
 shredded cheese (cheddar, mozzarella, pepper jack)

In a 10 inch skillet cook the bacon for 5 minutes over medium heat. Once some fat has rendered add the tomatoes. Toss well and continue to cook a few minutes until the bacon is cooked to your liking. Gently fold in the avocado and lemon juice. Season to taste with salt and pepper.

Spread mayonnaise onto the tacos. Top with avocado mixture, some fresh greens and cheese. Serve immediately.
