Recipe: BLT Quinoa Salad

This salad is filling, healthy & contains so many of my favorite ingredients. It's sort of a deconstructed BLT. Sort of.
1 cup dry quinoa, cook according to package directions
grilled chicken breast
butter lettuce, rinsed & pat dry
1 ripe tomato, chopped
bacon, cooked & broken into pieces
handful of blue cheese
Lemon Honey Salad Dressing
1/2 cup extra virgin olive oil
4 tablespoons lemon juice
3 tablespoons honey
sea salt to taste
ground black pepper
Plate butter lettuce. Top with quinoa, Grilled Chicken, chopped tomato, bacon pieces, blue cheese & sprouts.
Lemon Honey Salad Dressing.
Shake olive oil, lemon juice & honey in a jar. Season to taste with salt & pepper.
Serving Size 1 serving (quinoa will serve 4)
