My friends and family are always happy to be taste testers and they LOVED my Chipotle Lime Steak Kebabs with Cilantro Lime Rice recipes. We all agree that this would be the BEST menu to serve on July 4th!

We love this Chipotle Lime Steak Kebabs with Cilantro Lime Rice recipe for summer entertaining and healthy family meals.

Cilantro Lime Rice
 1 cup long-grain white rice, cook to package directions
 1/2 cup fresh cilantro
 2 tablespoons fresh lime juice
 3 tablespoons olive oil
 1 garlic clove
 salt & pepper to taste
Chipotle Lime Steak Kebabs
 1 pound rib eye or sirloin steak, cubed
 3 tablespoons grapeseed or olive oil
 1 lime juiced
 1 teaspoon chipotle powder
 1/2 teaspoon garlic powder
 1/2 teaspoon onion salt
 1 red pepper, cut into bite sized pieces
 1 zucchini, cubed
 8 ounces white mushrooms, caps only
 1/2 red onion, cut into chunky pieces
Cilantro Lime Rice

Cook rice. Let it sit for about 10 minutes. Fluff with a fork.


Add the cilantro, water, garlic, lime juice and a splash of water to your blender. Season with salt & pepper to taste.

Chipotle Lime Steak Kebabs

While you are cooking the rice...


Combine the oil, lime juice and seasonings with a whisk. Transfer to a gallon sized zip top plastic bag. Add the steak and veggies. Combine well & refrigerate for 1 hour. Thread the steak & veg onto skewers (if using wood be sure to soak first so they don’t burn) Discard the marinade. Grill over medium high heat for 6-8 minutes (depending on how well you like your steak) Serve with Cilantro Lime Rice.
