Sometimes a salad has lettuce & sometimes it doesn’t. In this case quinoa is the star (which it often is in my recipes.) Citrus is a star here too. So is my Lemon Honey Salad Dressing, which ties it all together.
Cook quinoa, let it cool & fluff with a fork. Trim fruit into pretty pieces, discarding seeds. Stir salad dressing into quinoa. Carefully fold in citrus, feta, green onion & avocado. Season to taste with garlic salt & pepper. Top with broccoli sprouts.
Shake olive oil, lemon juice & honey in a jar. Season to taste with salt & pepper.
