Halloween Monster Cookies go something like this. My sweet little 2nd grader was home from school feeling a bit under the weather. He was well enough to bake cookies though! These are my sons version of Monster Cookies. And he is mighty happy to share them with you…

 2 1/2 cups white whole wheat flour
 1 1/2 cups date or coconut sugar
 1/4 cup cocoa powder
 1 teaspoon baking powder
 1 teaspoon baking soda
 1/2 teaspoon salt
 1/2 cup (4 ounces) unsalted butter, room temperature
 1 cup unsweetened apple sauce
 1 large egg
 1 teaspoon pure vanilla extract
Toppings
 hot fudge sauce or chocolate syrup
 candy corn, m&ms, gum drops & sprinkles to decorate with

Pre heat the oven to 350 degrees F with two racks in the middle. Prepare 2 baking sheets with parchment paper or Silpat liners.

In a bowl whisk together dry ingredients. Cream together the butter, sugar, applesauce & vanilla with a stand mixer. Slowly add in the dry ingredients in 3 portions. Combine well until you have cookie dough.

Spoon large tablespoons of dough onto the pans. Leave about 1 inch around cookies, so they have room to spread. Bake 15-20 minutes or until just browned on the bottoms.

Transfer cookies to racks to cool. Place chocolate syrup where you want decorations & add the toppings to make monster faces.
