Jack Frost Martini

We love these pretty, frosty blue martinis for the holidays. They are festive and delicious!

 3 cups ice
 1 cup pineapple juice
 1/2 cup Blue Curacao
 1/2 cup white rum or vodka
 1/2 cup cream of coconut
 1 tbsp freshly squeezed lemon juice
for rim of glass
 agave syrup
 sweetened coconut flake

Rim the edge of 4 martini glasses with agave syrup. Place coconut flake on a plate. Roll the edges of the glass in the coconut. Set aside.

In a blender combine the pineapple juice, Curacao, rum, cream of coconut and lemon juice. Blend until smooth. Evenly spoon into the prepared glasses. Enjoy immediately.
