Recipe: Tex-Mex Burgers

There's still time to fire up the grill this summer! With Labor Day weekend around the corner it's time to make some burgers...these Tex-Mex Burgers will win over your party guests. The tastiest way to wrap up an epic summer!

 

 1 pound grass fed ground beef
 2 teaspoons chili powder
 1/ teaspoon salt
 1/2 teaspoon black pepper
 1/4 teaspoon garlic powder
 grape seed oil
 4 whole wheat burger buns, toasted
 8 crispy bacon strips
 lettuce
Guacamole
 2 avocados
 1/2 lemon, juiced
 1/4 cup minced red onion
 1 plum tomato, seeded and diced
 salt, pepper and garlic powder to taste
Pico de Gallo
 3 plum tomatoes, seeded and diced
 1/2 cup red onion, minced
 juice from 1 lime
 handful chopped fresh cilantro
 salt & pepper to taste
 Optional: jalapeño
Lemon Chipotle Mayo
 1/2 cup mayonnaise
 1/2 teaspoon ground chipotle spice
 squeeze of lemon juice

Combine beef with chili powder, garlic powder, salt & pepper. Make 4 patties, put a thumbprint in the center of each so they don't puff up when they cook.

Heat a splash of oil in a sauté pan over medium high heat. Place the burgers in the pan and cook about 4 minutes on each side or until done to your liking.

In the same pan, toast the buns with a splash of olive oil over medium heat.

Guacamole: mash the avocado with a fork, add the lemon juice & mash again. Gently fold in the tomato and red onion. Season with salt, pepper & garlic powder.
Pico de gallo: combine the tomatoes with red onion, cilantro, lemon juice. Add salt & pepper to taste.
Chipotle Mayo: combine all ingredients in a bowl until smooth.
Assemble: Slather some chipotle mayo on both sides of the bun. Top with burger, guacamole, Pico, lettuce & bacon.
