Sweet Coconut Scrambled Eggs on Toast

Today we are going to prepare something so simply perfect. Mindful, simple + happy food.

Eggs are usually considered a savory, but let’s face it they are used in sweets all the time. From cakes, cookies, frostings, puddings and more. Eggs take either center stage or they make baked recipes come together. Over here we love traditional savory scrambled eggs, but making a sweet egg scramble puts a nice little twist on a classic breakfast. You know how great your eggs taste when maple syrup oozes onto them from your stack of pancakes? Well then this is kinda like that. Go ahead and make the pancakes too if you wish.

We kept it simple with heart shaped toast and fresh fruit…

We love sprouted grain breads, but your favorite crispy baguette would pair well too.

Why is it that cutting food into hearts makes everything so *happy*

These would make a charming little breakfast or brunch for a shower, Mother’s Day, Valentine’s Day or Easter.

Keep in mind that this is simply a method type of recipe. Adjust ratios according to your taste and diet preferences. I am just suggesting that coconut and eggs + some sweetness are a match made in heaven.

Have you ever had sweet eggs? The first time I ever did was in a Japanese restaurant in the form of Tamagoyaki. That is a Japanese omelette made by combining eggs, rice vinegar, and sometimes sugar or soy sauce. The sweet~savory pairing is always a favorite!

If you want more yolks…add ’em.

More toast? Go for it. I love the eggs and fruit by themselves. Extra berries for me please. I can never have enough berries in my world.

Be sure to slather your toast with some melted coconut oil to round everything together.

Also get your hands on some heart cookie cutters in all shapes and sizes. If you don’t have them all ready.

    Sweet coconut on eggs? Now that’s a fun idea! For the first time ever, in 3 years, I posted an egg-based recipe on my blog…today. Great minds think alike. I like the idea of your sweet eggs, big time 🙂

  2. this is gorgeous! when I ate eggs more often, I used to LOVE sweet scrambles… kinda stumbled into them when I had leftover french toast egg once, and back in college my pup was lucky enough to get those eggs 😉 the sweet scrambles spiraled from there!

    I have a new breakfast beverage I am making lately, it will be perfect for our Valentines morning… I may have to include heart shaped toasts too!

  5. I’m going to have to try this. We have no plans for Valentine’s Day other than the kids parties at their schools. I’m making my special oatmeal cookies for the teachers and other parent helpers. When I made my menu for the week I didn’t think about Tuesday being Valentine’s Day. We’re going to have tuna melts. Maybe I’ll have to cut them in heart shapes for that little extra special Valentine’s Day boost.

    1. Shawna, the heart shaped sandwiches sound like a great idea! We are on our ski trip right now & I brought tons of stuff from home to surprise the kids with when they wake up ~ Including the cutest Valentine’s Day placemats I found last year. Sadly we are missing their parties at school, but thankfully the amazing skiing in Telluride is making up for that 😉 So nice of you to make those oatmeal cookies for the folks at school, bet they loved ’em!

  7. I have never tried sweet eggs, but when you mention about when syrup runs into them…yes, I do like that! The coconut sounds great with this. And extra berries for me, too, please! (And someone mentioned to me in a comment once about soy sauce on eggs – I must try that, too!)

  10. I made this tonight, it has been on my Tastespotting favorites for a long time now but I was a bit hesitant to try it for some reason. Man was it ever fantastic!! It seems an unconventional combo (to me at least) but it is so simple, and so delicious. I will definitely be making this again soon.

  11. You’ve definitely caught my attention! I’ve never before even considered eating sweet scrambled eggs. I have to admit I’ve pretty much fallen in love with scrambled eggs with truffle oil and parmesan cheese. It’s my go to for sure. I’m going to have to switch it up and try this recipe next time!

  12. I add in a tablespoon of nut butter or natural peanut butter and cook it in a tiny bit of melted unsalted organic butter. I personally love crunchy PB or Almond Butter in this recipe with a splash of 100% maple syrup. It stabilizes my blood sugar for longer periods of time compared to just plain scrambled eggs. Who would have thought eggs, coconut, maple syrup and nut butter? YUMMY, I stay full longer with no blood sugar crashes. Thank you for the recipe.
