All you need to do to is refrigerate your full fat coconut milk overnight to let the cream separate. Blend with smooth peanut butter and your favorite sweetener.

Top with a heaping handful of salty peanuts.

  1. Love this one, Marla! I am so impressed that the PB didn’t weigh down/deflate the delicate cream. I bet the coconut milk + PB combo is incredible.

    I’m a huge fan of PB anything and this would be amazing….on anything!

    1. Averie, I thought the PB would weigh it down. 1/4 cup PB to two cans of coconut milk is a really nice ratio. Lots of PB flavor and still fluffy whipped peaks!

  3. This post is right on time! My boyfriend is anxious to have whipped cream on his pancakes this weekend and we tend to try to keep dairy out of our diets and substitute in healthier ingredients. He’s going to go wild over all your difference whipped creations! Bet the pumpkin whip was a hit over the holidays!!
