Strawberries ‘n Cream Cookie Parfaits are filled with thick greek yogurt, my homemade Simple Strawberry Sauce & a shortbread cookie crunch!
My son took us on all kinds of wild & zany ski adventures…
He learns tons of new runs from his ski club & loves to show them off! He showed us Rock ‘n Roll ~ which led to Swingy. The kids crawled up on these wooden swings in the forest & shared all kinds of giggles! One day soon we will pack a lunch & have a ski feast right there.
I’ve been skiing these pistes for over a dozen years & I had never been on those runs. It was a blast!! Thank goodness for my kids & their love of the outdoors.
Let’s get back to food…
These parfaits give us tons of fuel for skiing & long school days. It’s the perfect breakfast, brunch or snack for Valentine’s Day too! If you want to lighten things up use plain greek yogurt instead of vanilla & a crispy sugar free cereal instead of the cookies.
Instead of strawberries, you can also make this sauce with any berry or favorite fruity craving.
