Recipe: Vegan Raspberry Steel Cut Oatmeal

We love this quick, easy and very healthy Vegan Raspberry Steel Cut Oatmeal recipe. Great for those busy weekday mornings and you can make it the night before!

4 servings

–raspberry sauce
1 cup fresh or frozen raspberries
splash of water
1 tbsp pure maple syrup or more to taste
–the oats
1 cup steel cut oats
1 (14 ounce) can unsweetened coconut milk
2 cups water
1/4 tsp salt

Make the raspberry sauce. In a small sauce pan, bring the raspberries, water and maple syrup to a boil, then simmer a few minutes until a sauce starts to form. Mash the berries against the sides of the pan so they release their juices. Simmer a few more minutes then remove the pan from the heat.
Bring the oats to a boil with the coconut milk, water and salt. Reduce heat to low and simmer for 25-30 minutes or until the oats are cooked to your liking. Stir frequently to prevent sticking. Mix in 1/2 of the raspberry mixture.
To serve top the oatmeal with the other half of the raspberry sauce.

Recipe: Vegan Maple Cranberry Oatmeal

Looking for a new way to prepare oatmeal? Try this healthy, delicious, vegan Maple Cranberry Oatmeal recipe. It’s a comforting meal on chilly fall and winter days.

6-8 servings

4 cups water
2 cups old-fashioned oatmeal
1 cup fresh/frozen cranberries
1/4-1/2 cup pure maple syrup
1/2 tsp ground cinnamon
1/4 tsp salt
–toppings
1/2 cup chopped toasted walnuts or pecans
1/2 cup dried cranberries

In a medium saucepan, bring water to a boil with the cranberries, maple syrup and salt. Cook about 3 minutes until cranberries start to burst. Add in the oats. Reduce the heat to medium and cook about 5 minutes, or until the oatmeal is cooked to your liking.
Place in a serving dish and top with the nuts and dried cranberries. Serve hot.

Calling all coffee lovers! Try this gluten free Coffee Overnight Oatmeal recipe for breakfast or brunch. It’s healthy and delicious.

4 Folgers Perfect Measures coffee tabs
1 3/4 cups water
1 cup old fashioned rolled oats
2-4 tablespoons pure maple syrup (depending on your sweetness preference)
4 tablespoons half and half
2 tablespoons chia seeds
2 pinches ground cinnamon
2 pinches salt
–Toppings
whipped cream
Folgers Instant Coffee

Brew coffee. Divide the rest of the ingredients into two 16 ounce mason jars. Pour the hot coffee in equal measures into the mason jars. Screw on the lids and shake well. Place in your refrigerator overnight. Wake up to delicious Coffee Overnight Oatmeal. Serve warm or cold, heat in the microwave if desired. Top with whipped cream and instant coffee granules.
