Recipe: Quick, Easy & Crispy Baked French Fries

Save the calories and skip the fries with this Healthy, Quick, Easy & Crispy Baked French Fries recipe. All you need are 3 ingredients, potatoes, oil and salt!

4 servings

1 1/2 pounds (about 3 large) Russet potatoes, cut into 1/4-1/2 inch matchsticks
1/4 cup canola or vegetable oil
1/2 tsp salt
1/2 tsp pepper
–optional toppings for during baking
garlic salt
garlic powder
smoked paprika
–optional toppings to toss fries with after baking
chopped rosemary
chopped parsley
hot pepper flakes
parmesan cheese

Clean and pat dry the potatoes. Do not remove the skin.
Slice into desired thickness.
Preheat the oven to 450 degrees F with the rack on the lower level.
In a large bowl toss the potatoes with the oil, salt and pepper and any other toppings you like.
Place on the baking sheet in a single layer.
Bake for 25-35 minutes tossing the fries in the middle of baking time.
Serve immediately with ketchup and any extra seasonings. Toss with parmesan or chopped fresh herbs if desired.

Recipe: One-Pot Chicken Cazuela (Chilean Stew)

This healthy Chicken Cazuela (Chilean Stew) recipe is perfect for all those upcoming chilly fall nights and busy back to school weeks.

4 servings

1 lb chicken thighs (3-4 thighs)
2 tbsp olive oil
4-5 cups hot water, chicken or vegetable broth water
1 onion, peeled and cut vertically into eighths
1 tsp dry oregano
1 tsp ground cumin
8 small red, purple or white potatoes
2 carrots, peeled and cut across into 1 inch pieces
1 green bell pepper, seeded and cut into large pieces
1 stalk celery, chopped
1 sweet potato or 1 cup cubed pumpkin meat
2 ears corn, each cut into four rounds
1 cup green peas
2 tbsp chopped cilantro, plus extra for serving
salt and pepper to taste
rice for serving

Heat the oil in a Dutch oven over medium high heat. Sprinkle some salt and pepper on both sides of the chicken. Braise the chicken for 3-4 minutes on each side until golden brown.
Carefully add the broth to the pot with the onion, oregano, cumin, potatoes, carrots, pepper, celery and sweet potato. The broth should come to the top of the stew ingredients. Bring to a boil then reduce to a simmer. Cover the pot and cook for 30 minutes.
Add in the corn and peas. Cook for another 5-10 minutes until all the vegetables are tender. Stir in the cilantro and adjust seasonings to taste. Serve hot with rice and extra cilantro on the side.

Recipe: Healthy Oven Fries

Healthy Oven Fries recipe, guilt free French Fries to enjoy anytime at all!

1 1/2 – 2 pounds Purple Passion, Russet (see note) or any small firm potato
olive oil
garlic salt
black pepper
–optional seasonings
smoked paprika
turmeric
curry powder
Chinese five spice
thai seasoning
chili powder
–garnish with
chopped fresh parsley

Pre heat the oven to 425 degrees with the rack in the middle.
Cut the potatoes into quarters.
Line a cookie sheet with tin foil.
Rinse the potatoes under cold water and pat dry with paper towels.
Place the potatoes on the cookie sheet and toss with a generous pour of olive oil. Sprinkle some garlic salt, pepper and any other seasonings you like. Toss with clean hands until well coated.
Bake for 30-35 minutes until browned, cooked through and crispy. Toss half way through cooking time with tongs, this will encourage all sides to crisp up.
Transfer to a bowl and toss with parsley, serve immediately.

If using larger Russet potatoes, trim to 1/2 inch slices.
