Irish Apple Cake

Irish Apple Cake

Ingredients

For the Streusel Topping
6 tbsp cold salted butter, cut into small cubes
¾ cup unbleached all-purpose flour
¼ cup rolled oats
½ cup granulated sugar
¼ tsp ground cinnamon
pinch of salt
For the Cake
1 stick salted butter, room temperature
½ cup granulated sugar
2 tsp pure vanilla extract
2 large eggs
1 ¼ cups unbleached all-purpose flour
1 tsp baking powder
1 tsp ground cinnamon
¼ tsp ground ginger
cup salt
3 tbsp milk
2 granny smith, pink lady or gala apples sliced thin

Directions

Preheat oven to 350˚F with the rack in the middle. Grease a 9-inch round cake pan with butter & parchment to line the bottom.

Assemble the streusel topping. In a medium bowl mix together the flour, oats, sugar and salt. Rub the butter into the flour mixture until the streusel resembles coarse breadcrumbs. Store in the fridge until ready to use.

For the cake: Using a stand mixer & paddle attachment, cream the butter and granulated sugar on medium-high speed until light & fluffy. Add the vanilla, then beat in the eggs one at a time. In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger and salt. With a rubber spatula, fold the dry ingredients into the wet along with the milk.

Transfer the batter to the prepared pan. Layer the apples over the top, then sprinkle the streusel over the apples.

Bake the cake for 60 to 70 minutes. The top should be golden brown and crisp. A toothpick inserted into the middle of the cake should come out virtually crumb free. Remove from the oven, let cake cool a bit before flipping it onto a cooling rack or cake platter.

Recipe: The Ultimate Cream Cheese Frosting

This is our absolute favorite Ultimate Cream Cheese Frosting recipe for cupcakes, cake & frosted cookies. Comes together in just 3 minutes!

2 1/2 cups frosting

1 cup (8 ounces) cream cheese, room temperature
1/2 cup (4 ounces) unsalted butter, room temperature
2 tsp vanilla bean paste
4 cups powdered sugar

With the paddle attachment in a stand mixer, beat the cream cheese, butter and vanilla paste on medium speed until smooth.
Reduce mixer speed to low and slowly add in the powdered sugar a cup at a time.
Mix until well combined. Increase the speed back to medium once the sugar is blended in.
Whip until creamy and well combined.

Recipe: Super Sexy Chocolate Frosting

The ultimate Chocolate Frosting recipe. This velvety buttercream is great for all of your cakes, cupcakes and maybe even better licked from a spoon!

2 cups of frosting

1 1/2 cups (3 sticks) unsalted butter, softened
5 cups powdered sugar
1 cup unsweetened cocoa powder
2-3 teaspoons of vanilla
1 teaspoon ground cinnamon
2 teaspoons instant coffee or espresso
1/2 cup milk (add more if needed)
1/4 teaspoon salt

In the bowl of a stand mixer beat the butter until it is light and fluffy. Add the sugar, combine well. Add the cocoa powder, vanilla, cinnamon, and espresso, beat again. Slowly add the milk in a few additions and continue to beat until frosting is light and fluffy. Add more or less milk according to your preference and how thick you want the buttercream.
Tip: Buttercream to thin? Add more powdered sugar one tablespoon at a time. Is it too thick? Add more milk one tablespoon at a time.

Recipe: Chocolate Chip Raspberry Banana Bread

This banana bread is an extra special treat with the chocolate chips and raspberries, great for breakfast, brunch and entertaining!

1 loaf (12 servings)

2 cups unbleached all-purpose flour or white whole wheat flour
3/4 cup packed light or dark brown sugar
1 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp kosher salt
1/2 cup unsalted butter, melted
2 large eggs, room temperature
1/3 cup buttermilk, room temperature
2 cups very ripe, mashed bananas
1 tsp pure vanilla extract
3/4 cup semi sweet mini chocolate chips plus 1/3 cup for topping
1 cup fresh raspberries, tossed in 1 tbsp unbleached A/P flour

Pre heat the oven to 350 degrees with the rack in the lower third.
Grease a 9X5 loaf pan with butter or cooking spray.
In a large bowl, whisk together the flour, sugar, baking soda, salt and cinnamon. In another bowl, combine the butter, eggs, buttermilk, bananas and vanilla. Stir the wet into the dry ingredients just until moistened. Fold in the chocolate chips and raspberries.
Pour batter into prepared pan. Top with the 1/3 cup chocolate chips.
Bake for 60-65 minutes or until a skewer comes out virtually crumb free.
Remove from the oven and allow to cool completely in the pan on a wire rack before slicing.
