Recipe: Blueberry Cosmopolitan Cocktail

We love this refreshing cocktail in the warmer months, make the most of those fresh & juicy summer blueberries. Can also be made with frozen berries.

1 cocktail (blueberry puree for 4 cocktails)

–for each cocktail
1/3 cup blueberry purée
2 ounces vodka
1 ounce St. Germaine (elderflower) liquor
1 tbsp freshly squeezed lime juice
fresh blueberries for garnish
–for the blueberry puree
1 cup fresh or frozen blueberries
2 tbsp water
2 tbsp cup granulated sugar
1 tbsp key lime juice

–for the blueberry puree
In a small saucepan, bring the berries, water, sugar and lime juice to a boil over medium heat. Cook for 5 minutes until berries soften. Transfer to a blender and purée the mixture.
–for the cocktail
Add all ingredients to a cocktail shaker 1/2 filled with ice and a splash of water. Shake until well combined. Strain into a chilled martini glass. Garnish with a blueberry pick.

A bit like a creamsicle. A bit sparkling. A bit boozy.

4-6 Pops

10 ounces Sparkling Izze Soda (any flavor) Dry Soda would be great too
1/2 cup Heavy Cream
2 ounces Vodka (plain or flavored)
1 tablespoon Honey

Whisk together all ingredients in a large cup with a spout. Pour into pop molds. Let freeze undisturbed overnight. Carefully remove from molds & enjoy!
