1/2 cup unsalted butter, room temperature
3/4 cup unrefined coconut sugar, maple syrup or light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups gluten free oat flour
1 teaspoon ground cinnamon
3/4 teaspoon baking powder
1/4 teaspoon kosher salt
1/2 cup creamy or crunchy natural peanut butter
3/4 cup semi sweet chocolate chips
powdered sugar

Pre heat oven to 350 degrees with the rack in the middle. Grease a 10" cast iron skillet with vegetable oil or butter.

Cream the butter with the peanut butter in a bowl in a stand mixture with the paddle attachment, medium speed. Add in the sugar & eggs. In a bowl whisk together the flour, cinnamon, salt & baking powder. Add this in 3 additions to the mixer bowl. Mix a few minutes until all the ingredients are well combined. Add in the chocolate chips.

Place batter in the greased skillet. Bake for 18-20 minutes. Cookie should be golden brown on the top. Let cool a few minutes, slice & dust with powdered sugar.
