Chocolate Covered Granola Bar Bark

I was recently asked to create a few recipes for CA Milk. The client asked for recipes that pair well with a cold glass of milk. Totally my kind of program! What pairs better with milk than granola & chocolate?

 2 cups old fashioned rolled oats
 1 cup unsweetened coconut flake
 3 tablespoons unsalted butter
 2/3 cup honey
 1/4 cup coconut sugar or brown sugar
 1 1/2 teaspoons pure vanilla extract
 1 teaspoon ground cinnamon
 1/4 teaspoon salt
 1 bag (12 ounces) semi sweet chocolate chips

Pre heat oven to 350 degrees Fahrenheit with the rack in the middle. Prepare an 8X12 inch pan with parchment paper.

Combine oats & coconut and place them in the pan.

In a small sauce pan combine butter, honey, sugar, vanilla, cinnamon & salt. Bring to a boil & pour onto the oat mixture. Combine throughly, make sure all the oats are covered with the honey mixture. Press into the pan with the back of a spoon. Bake for 25-30 minutes, until the granola is golden brown.

Melt the chocolate in a microwave safe bowl. Pour the chocolate onto the granola. Let the granola cool to room temperature then chill in the fridge or freezer so the chocolate firms up.

Remove from the fridge & let sit for a few minutes until just soft enough to break apart with your hands.
