When boozy popsicles became a trend a few years ago I was forever sold. Try these & you will quickly see why the trend has stuck around!
In a saucepan combine the strawberries, powdered sugar & vanilla extract. Bring to a boil & simmer a few minutes until you have a sauce. Stir well. Remove pan from the heat & mash strawberries on the side of the pan with a fork. Chill completely.
Combine chilled strawberries with sour cream, milk and tequila. Whisk together well. Carefully spoon mixture into popsicle molds, leaving about 1/4 inch at the top of each mold for expansion. Insert popsicle sticks. Freeze for at least 4 hours.
Let pops sit out for a few minutes or run them under warm water to release from the molds. Remove carefully, these are softer due to the alcohol.
