Decadent meets skinny….just the way I like it.
I crave sweets daily. So do my kids…..I think most of us do come to think of it. Tasty rewards are something to look forward to….right?? For me everyday mindful lifestyle treats need to be clean, high energy goodies. You guys might think I have gone a bit wacky here, but I tell you…..you gotta try this. Just visualize your favorites. In this treat we have a toasty, warm “cake,” thick & custardy chocolate “mousse” all topped with rich, creamy nutty “butter.”
Yes, I just uttered these three words:
OK, how the heck is Marla gonna make this an “everyday food” and not the infrequent “indulgence food”. Let me interpret this for you, but please stick with me ’cause it’s not what you think.
CAKE= 1/2 toasted sprouted grain English Muffin
MOUSSE=Non-Fat Thick Greek Yogurt with Cocoa powder & Natural Sweetener
BUTTER=Your favorite Nut Butter or Sunflower Seed Butter
If this is a treat for you, your waistline will love you. If this is a treat for your kids….they will yum it up without the inevitable nasty sugar crash. This “cake” makes for a well balanced Mini-Meal or breakfast. Just be mindful of your portions as always. You will walk away from the table feeling like a million bucks, as if you just had a decadent pastry (ha, but you didn’t!)
ALL satisfaction. NO guilt, NO icky blood sugar crashes and NO energy zappers. Really, I promise!

Skinny Peanut Butter & Chocolate Mousse “Cake”
Serves 1

- Whole Grain Bread Choice: 1/2 Toasted Sprouted Grain English Muffin -or- 1 Piece Toasted Sprouted Grain Bread. My favorites are Alvarado and Ezekiel brands. You can visit Ezekiel and Alvarado St. Bakery to see and buy the full range of their sprouted grain products. Just remember to store your sprouted grain bread in the fridge to maintain it’s freshness! I usually buy mine at Whole Foods or Trader Joe’s.
- 6 oz Marla’s Cocoa Mousse
To make the Mousse:
6 oz Non fat Thick Greek Yogurt
Marla’s Cocoa Paste: about 1 Tbs great quality Cocoa Powder. I use Unsweetened Cocoa Powder and I add Stevia to taste. You can use Honey, Maple or Agave instead.
- Stir yogurt, cocoa powder and sweetener together. Voila! Healthy, yummy Cocoa Mousse!
1 to 2 tbs natural Nut Butter: Use the good stuff, the ingredients in your nut butter should read: Nuts and maybe Salt. You could also make your own!
METHOD
- Toast your bread
- Top with a dollop of Cocoa Mousse
- Top Mousse with Nut Butter
Add a twist of Salt, Cinnamon, Ginger, Nutmeg or Cardamom if you wish. Lately I have been loving some crunchy Fleur de Sel sprinkled on the top. The sweet savory thing is divine!
NOTE: You will have quite a few ounces of mousse left over. Dip your sprouted muffin or finish the mousse off by itself. All of this will satisfy requirements for one Mini Meal.

The mousse. You know I make a choc mousse out of avocado and cocoa powder and agave. I know it doesnt sound good but it’s sort of a raw vegan staple in the choc pudding/mousse department and if you’re ever looking to use up an overripe avo, this is a great way!

Decadent meets skinny sounds perfect to me…I love this idea, Marla! I’ve mixed nut butter into Greek yogurt, but I never thought about mixing cocoa powder in…sheer brilliance! And like you said, I love how something this delicious and healthy leaves you feeling satisfied and nourished without any energy crashes!

Curious to try this healthy version of mousse. I love the rich, decadent version…but rich it is! Looks like a good breakfast treat.
This looks absolutely delicious. Can’t wait to try it! I love having muffin + PB for breakfast and usually add some banana or raw honey. But this would be a very nice change. Have to get a good cocoa powder then!
