I used to think of spaghetti squash as just a winter veg….these days it’s available all year long & I’m gonna enjoy it as much as possible! Looking for an alternative to carby pasta? This Spaghetti Squash “Pasta” with Kale Pesto is your answer! It’s so simple to make your own pesto sauce, you can add more of this or that & not worry much about exact measurements. For me this is the best kind of recipe. The less pots, pans & kitchen gizmos I need to clean up the better! If you have a super large squash then please make a double batch of my kale pesto sauce. Everything depends on how saucy you want your squash. Always have extra grated parm for the topping! With this warmer weather my cocktail of choice is the Aperol Spritz. At the end of the summer I’m trekking the Dolomites…and this my friends will be enjoyed every afternoon in cafes around town square. I figured why not start the trend here in Telluride?!
