Great for lunch & dinner & delish for lunch boxes! How was your weekend? Ours was amazing! I was in Vail & Beaver Creek with my pals after doing TV segments in Denver, NYC & a Skype interview on Headline News. It was busy, super charged & loads of fun! We had fun watching the Ski Championships & drinking lots of vino. Then I came back to Telluride to be with my family (missed them like crazy!) Phew! I’ve been cooking all day & enjoying every minute of it! I’ve been craving pesto like crazy lately ~ so this was the first dish I whipped up. There’s something about the slightly warmer weather (it needs to snow here desperately) that makes me crave a fresh pesto sauce. Orecchiette is one of may favorite pasta shapes. Its easy to cook al dente & it holds sauce so nicely. What’s your favorite pasta shape? In this pesto I combined baby spinach, parmesan cheese, garlic, olive oil & pecans. Simple to get ingredients. Alice, you are so right! Here in Telluride it can be very tricky to get my hands on fresh basil. The spinach is a win all around!
