With Cinco de Mayo here in a few days it’s time to talk about margaritas & Mexican food (then again, it’s always a great time to think about that combo!) These Veggie Tostadas are delicious & simple to prepare before your guests arrive, they are equally impressive for a weeknight family meal! Prep & cooking was so fun on this dish. It was blustery cold out this weekend & I was craving sunny flavors. There was no way I was heading to the market, so I had to find ingredients that were all ready in my fridge & pantry. Thank goodness they were all here & I could keep on my fuzzy pj’s & slippers. I often brave the snow in my slippers, but the outcome is wet, cold feet. I know. Not wise. Have you ever made refried beans? They are much tastier than anything from a can. Besides, it’s fun to take out any aggressions when you smash the beans on the side of the pan. I happened to have some fresh zucchini & avocado in the fridge. A can of diced tomatoes with chilies was hiding out in my pantry. I always have onions & garlic at the ready. This veggie sauté is worth making a double batch! I used tandoori spice mix instead of chili powder for a subtle flavor twist. It was so good! I made plenty of guacamole too, you can never have enough of that. Are you planning on heading out to a Cinco de Mayo party? Maybe you are hosting one?
