We had a rainy, cool weekend here in the OC and I thought it was time to post a warm and comforting Rustic Roasted Tomato Soup. This is a classic soup that should be in everyone’s recipe box. It is very simple to prepare and wonderful all year round.

Enjoyed with a side salad and a oozy grilled cheese sandwich and all is right in the world.

Aren’t those vine tomatoes spectacular? How about the mini Bocconcini mozzarella balls? Those are super fun floating around in your bowl of soup. Don’t forget a splash of hot sauce too.

I have a few of Ina’s Barefoot Contessa cookbooks. I use Ina’s recipes as a springboard for ideas and make them my own. This is the case for tomato soup. The recipe is bit too heavy for my tastes. Ina and Heather use 3/4 cups of heavy cream. I prefer to not use as much cream in my recipes.

We all have different tastes. That’s cool.

  1. At this time of year, there is so much rich and heavy food around that it’s so nice to have something a bit lighter too. I love the idea of the little mozzarella pearls floating in the soup too, just perfect!

    1. Thanks Heather! Nothing from a can could be nearly as good as homemade. This soup takes a few minutes longer than popping open a can, but the effort is so worth it. Make a double batch so you have lots and grab and go leftover portions. This soup would freeze really well too!

  5. The soup look great. Nordstrom makes a tomato basil soup that when I was pregnant, I swear, I’d go to the mall to the Nordstrom Cafe just to have that soup. I never knew it existed and someone turned me onto it. Your version looks wonderful.

    And I love the mini Bocconcini mozzarella balls. Too cute!

    1. Jennifer, it is like a Caprese soup. This would be great for summer parties too. No need to save it for the fall/winter months. When I think Caprese I think warm weather…

  6. Yummy! That looks so delicious. Yesterday was the perfect day for soup. Roasting any veggie gives it the best flavor ever! I want to make this for lunch on thanksgiving day. It is supposed to rain and be cold. A little comfort food goes a long way! Your photos are so amazing! Love it!

I once made vegan “creamy” tomato soup (creamy from blended soaked cashews) and was a little less than impressed…but I do think it was because of my impatience and excitement in combining the ingredients (it was my first time making soup from scratch). The soup turned out a little grainy (from not blending long enough), but it had potential!
    I imagine that in roasting the tomatoes (like you did here), the recipe is 10X better.
    I’m going to bookmark this baby and make it on a snowy day…which is not too far off round these parts 🙂

    1. Hi Alyssa! I could see how the cashews could make a really nice and creamy soup soup. You are right though, they would need to be ground well and puréed seamlessly with the tomatoes. Roasting your tomatoes first gives them a great big jumpstart in flavor. They actually do become more creamy tasting….mixed with the olive oil. All of the flavors have a nice amount of time to marry while roasting. Keep in mind this soup is even better the day after you make it!

  8. I’m bookmarking this one! I love roasted tomatoes and it is indeed the season for soup and grilled sandwiches. If I needed to add flour to thicken the soup, would I do that at the very end, before removing from heat and pureeing? And could I use regular all-purpose flour? (I don’t have coconut flour).

    I know this was posted a while ago,however, I just pinned from Pinterest, but I have a question that didn’t seem to be answered ……unless I missed it. My question is, if you do need to thicken it, at what point would you thicken it, and do you just add the coconut flour directly or does it need to be mixed with water? Why coconut flour? Any other suggestions for thickener? Love your site, pictures, and recipes!
