Rocket Pops. These bright colored stripy pops are usually made out of  made out of red and blue food dye and some sort of “cream” center. My Berry Bliss Rocket Pops are full of fresh berries with a frozen yogurt center stripe.
Not only do they taste great, but you can change up the flavors any way you wish. Â My popsicles are blueberry and strawberry. That is why I named them Berry Bliss!
Gotta let you know that I came up with this recipe and photographed it a few weeks ago. I was so excited about being all creative and then my teeny tiny issue of Martha Stewart’s Everyday Food was slipped into my mailbox. What was on the cover?
Stripy berry pops quite similar to mine. But mine are better……’cause I say so.
OK, i’ll play fair. Theirs are great too. I just like being the first to come up with fun recipes for you!
These ice pops are good for you, sugar free, low fat and super tasty.
To get that awesome Rocket Pop shape I use these handy star ice pop molds from Tovolo. You can find them on my Amazon.com store. Their Groovy shape would work well too. So would dixie cups if you don’t have any ice pop molds.
These pops would be perfect for Memorial Day, July 4th, Labor Day and the Jubilee (for our British friends) and any other summer picnic, BBQ or beach party.
They are great for an everyday poolside snack.
They would be fun on a dessert table. Check out my Sunny Strawberry Sandwich Cookies ~ those would be fun too!
You can use any fruits and berries you have on hand. Also feel free to play with the white stripe. You can use coconut milk, greek yogurt, heavy cream or anything else you can dream up.

Only question is… I’m reading the recipe and trying to imagine it in my head and I keep thinking the strawberries should go in the molds first…so the red will be at the top of the popsicle as you have pictured? Since I am Canadian, I will naturally skip the blueberries and use all of that delicious strawberry sauce up, hehe. Maybe even use maple syrup to sweeten? 🙂

So the original taste of the white is lemon, if I melted lemon sherbet to help it settle in uniform shape do you think it would still stick together like that?
