From what I gather bunnies love carrots. Not any carrots will do….they prefer carrots that are colored like the rainbow. Add some sweet mandarins and I bet the Easter Bunny will be banging down your door with all four paws.
Carrots have a natural sweetness that is fondly brought out when you roast them. Adding mandarins sweetens ’em even more…

It does look like a rainbow indeed. When I came to San Francisco I was amazed after visit on a market. Such a beautiful vegetables and you have carrots in different colors 🙂 And now I know what I’ll prepare before `i leave.
I always love seeing these rainbow carrots – haven’t been able to find them around here, but hoping to see them at our farmer’s market this year.
Oddly enough I find loads of these beauties here in Telluride….but I can’t find many basics. Go figure 😉
