Strawberries ‘n Cream Cookie Parfaits

Does your sweet tooth beckon more often then you would like it too? If you answered YES I know the feeling! I created this recipe so we can all indulge without the guilt…

 1 pound fresh strawberries (you can use frozen too)
 3 tablespoons water
 1-2 tablespoons pure maple syrup, honey or agave
 1 cup vanilla or plain Greek yogurt (per parfait)
 2 ounces shortbread cookies per serving, crumbled
 cut strawberries for topping

In a saucepan bring strawberries & water to a boil. Reduce heat, cover & let simmer for about 5 minutes until strawberries are pulpy. Remove the sauce from the heat & let it cool a bit. Puree in the blender. Sweeten to taste if desired. Let the sauce cool in the fridge.

Crush the cookies by hand or in a food processor.

Layer the parfaits with the yogurt, sauce & cookie crumbles.

This recipe makes 1 1/2 cups strawberry sauce. You can use it in so many ways. It's great on pancakes & in smoothies too!
