These were truly the most simple little treats to make. Usually I make them in bar form and munch them as a pre or post workout snack. Here I made cute little hearts for Valentine’s Day. Not sure I know anyone who does not love the chocolate peanut combo. It is a natural flavor pairing like maple and cinnamon. The other bonus is you don’t need to bake them or add any sugar. The medjool dates add all the sweetness you could ever need.
My two kids loved them at their little homemade tea party.ย The combo is a party in your mouth. With no refined sugar and all good for you ingredients this indulgence is well worth the tiny little effort it takes to make them.

No Bake Chocolate Peanut Butter Cookies
makes about 20 2″ cookies
NOTES
- I say go Big Batch here, the more cookies you have the better! This recipe can easily be doubled or tripled.
- As always, use your own taste buds to determine how you want to season your cookies. Cardamom, ginger, nutmeg and pumpkin pie spice would all be good too.
INGREDIENTS
- 12 oz chopped, pitted dried Medjool Dates
- 2 oz all natural Peanut Butter (or any other nut butter you love: Almond, Cashew or even Sunflower Seed Butter)
- 2 heaping tablespoons unsweetened cocoa powder
- 1 oz Old Fashioned Rolled Oats
- pinch of Salt
- pinch of Cinnamon
- ground Almond Meal (Use this instead of wheat flour to help roll out your dough and prevent sticking to the rolling pin and work surface.)
METHOD
Combine all ingredients in a food processor.ย Process thoroughly until you have a firm ball of dough. ย Pinch with fingers to see that everything is well combined.ย Press dough into a ball and chill in fridge for about 1/2 hour.ย Roll out dough to about 1/4 inch thick, sprinkle almond meal on dough to prevent sticking. ย Cut out hearts or whatever shapes you desire. You can also roll them into “balls” or truffles.ย Lay parchment or wax paper in between layers of cookies and store sealed in an airtight container in the fridge. You can store them long term in the freezer as well.

Fresh Variations
- You want to send your kids to school with some of these cookiesย but school is a “no peanut butter zone.” ย No problem, use Almond Butter or Sunflower Seed Butter instead.
- Gently roll or press toasted unsweetened coconut, nuts or cocoa powder on your cookies.
- As with a sugar cookie you can make themed no-bake cookies. Just choose the appropriate cookie cutter for whatever holiday or celebration you have lined up. ย You can press in sprinkles for some color too.

You did a phenomenal job w/ these. I love that there’s no nuts/cashews and that it’s just dates, PB, and a scant bit of oatmeal. Wait, i just re-read and notice almond flour. How much, you dont specifiy. Not that I can actually follow a recipe without tweaking it though ๐ LOL

I made something really similar recently with just dates, peanuts, and cocoa powder. Even my husband called them “indulgent”. I love the addition of oats and cinnamon used here, and I can’t wait to try cutting the dough into fun shapes instead of just balls.

I used to have a particular friend who had an amazing skill. He could swoon so dramatically and so convincingly over whatever it was he was eating that my children would go instantly green with envy and demand that they get some of whatever it was that he had. This was my go-to technique for getting them to eat foods they would have run screaming from on their own. Sadly I have moved a country away from him and haven’t found anyone that can match his finesse. Now I’m just left with Mommy authority, which isn’t nearly as powerful ๐
