This Plum-Mint Gin Fizz Cocktail is refreshing, fruity and perfectly sophisticated. Make extra plum puree for topping pancakes, ice cream & parfaits too!
'--Plum puree
Combine plums, ginger, sugar, and lemon juice in a medium saucepan. Cover and cook over medium heat, stirring occasionally. Let the plums release their juices, about 5 minutes. Uncover and continue to cook until the plums soften and start to fall apart about 6–8 minutes longer. Let plums cool slightly. Transfer to a blender or food processor and blend well until you have a smooth puree. Let the purée cool. This will yield enough puree for 6-8 cocktails.
In a cocktail shaker, muddle 1/4 cup of the plum puree with the mint leaves. Fill the shaker with ice. Add the gin & a splash of water if needed. Shake well to combine the flavors. Pour into chilled, ice filled high ball glasses. Top with sparkling water and garnishes.
