The Dominican Republic is known for its delicious food. This recipe is filled with lively flavors and is jam-packed with all sorts of great-for-you ingredients. Offering up lots of native proteins like chicken and plenty of veggies like tomatoes and bell peppers.

2 pounds chicken breast, cut into bite sized pieces
2 limes cut into halves
1 teaspoon dry oregano
1 small red onion (1 cup) chopped
1/2 cup chopped celery
1 teaspoon of salt (plus salt & pepper to taste)
2 cloves mashed garlic
2 tablespoons of canola or grapeseed oil
1 teaspoon of granulated white sugar
2 cups of water
4 plum tomatoes cut into quarters
2 green bell peppers, chopped into bite-sized pieces
1 cup of green olives with pimentos
1 cup tomato sauce
1/2 cup fresh cilantro + more for garnish

In a bowl or zip-top bag, marinate the chicken, oregano, onion, celery, salt and garlic for 30 minutes.

In a pot, heat the oil over medium heat, add sugar and cook until it browns.

Add the marinated ingredients and garlic. Sauté until the chicken is light brown on all sides.

Add the olives, water and tomato sauce. Cover and simmer over medium heat for 15 minutes, stirring well.

Add fresh cilantro. Season with salt and pepper to taste.

Serve with rice, salad or beans.
