Recipe: One-Pot Pasta with Beef & Broccoli

A delish weeknight meal that is simple to prepare & you will not have a sink full of dirty pots & pans when you are done cooking. In less than 30 minutes you can have dinner on the table. Anything to save time is a great thing!

This One-Pot Pasta with Beef & Broccoli dish is perfect for back to school family dinners & there is plenty leftover for the lunchbox too!

One-Pot Pasta with Beef & Broccoli

 1 pound (16 ounces) Rigatoni (or a pasta that cooks in the same length of time)
 1 tablespoon olive oil
 2 cloves garlic, minced
 1 onion, chopped (1 cup)
 1 pound ground beef
 1 head broccoli, use crown & chop into bite sized pieces
 4 cups beef stock
 1/2 cup heavy cream
 1 teaspoon red pepper flakes

In a large pot heat the olive oil, garlic & onion over medium heat. Cook a few minutes until softened & fragrant. Add the beef, continue to cook for about 7 minutes, or until the meat is cooked through. Remove this mixture from the pan & set aside.

Add the pasta, broccoli, stock & cream to the pan. Bring to a boil, cover & cook about 12 minutes or until most of the liquid is absorbed & pasta is cooked through. Add small amounts of water if needed. Add beef mixture back into pan the last 3 minutes of cooking time. Serve hot & enjoy!
