There have been so many awesome recipes passed around the internet the past few weeks in preparation for the beginning of the football season. Do I even know who is playing, no. Do I know what I will be eating, sure. This Chicken with Coconut-Lime Peanut Sauce is a fun alternative to chili. It is packed with flavor and protein. Great for game day or any time at all.
When it comes to spectator sports it is all about the food for me. Whoever wants to stand on the side lines to chat and eat can hang with me. In this chicken recipe creamy coconut pairs perfectly with peanuts and lime. This dish is filling, but not heavy. if you are a fan of peanuts, you will love this sauce!
I added some bright green asparagus. Not only does it add flavor and great texture, you get your veggies too. Serve with some brown, jasmine or basmati rice and you have a full meal. You can make a double batch of sauce if you wish. It would be awesome to dip freshly baked bread or naan in it.
This sauce tastes even better the next day after the flavors have a chance to combine.
I like to make a big batch of this chicken dish so we have enough for a few days. It is great for lunch, dinner and the lunch box.
What are you serving before the Football game?

Love all of these flavors. A coconut-peanut sauce sounds so good!
Totally adding this to the menu next week. Yum!
Love the peanut sauce!
That looks succulent and so tasty! A delicious combination.
Cheers,
Rosa
any left overs for lunch today! if so, I am on my
way!!!!
Marla, this looks delish! Cannot wait to try it. Anything
with coconut milk and peanut sauce is a hit around here. Thanks for
all of your fabulous, healthy recipes!
Catherine: You are so welcome! I always love to lighten things up without sacrificing flavor.
When it comes to watching the game, I’m with you, Marla! In
fact, I would love to chat and eat with you any time! This looks
really delicious, love that peanutty sauce…and the lime is great
in there too, I bet it really brightens the flavor!
Faith: You are so right-perfect choice of words. The lime does help “brighten” the flavors in this dish. We would have a blast “watching not watching” the Super Bowl together. Are you guys still living close to Syracuse, NY?? I will be speaking there the end of March and would love if you could come visit….
You are so sweet, gorgeous! I would absolutely love to meet up with you but I’ll be out of the country. I haven’t made the “official” announcement on my blog yet, but Mike and I are going on vacation from early March through late April. We’re going abroad and visiting his family who he hasn’t seen in 4 years…we’re super excited! Sorry I’ll miss you, sweetie!
Faith: If your plans change, just let me know as I would love to finally meet you in person 🙂 Sounds like you an Mike have an amazing vacation in the works. I can’t wait to hear all about your planning!! Your Linzer Cupcakes today are unbelievable!
Tried this over the weekend it was AWESOME and so easy to make
This looks amazing! mmmmmmmmmmmmm
If this tastes anything like how it looks… it is quite
possible the best meal ever made! Gorgeous girl!
Amanda: I always love your enthusiasm for great food. Sweet or savory. You can come over to join me for a meal & laughs any day!
Peanut sauce is a HUGE favorite of mine — I love the idea
of combining with coconut and lime flavors. Your photos are
gorgeous!
Looks so flavorful and pretty!
This is certainly something my family would love! As usual,
your photos are absolutely incredible!
This is a great looking chicken dish. I will try this
recipe and thank you for sharing.
Yummy! That is brilliant. I LOVE peanut sauce. Lime on
anything makes it taste wonderful. Can I get all this at the local
trader joe’s or do I have to go to an Asian specialty store for the
fish sauce? Love Thai food, so I will love this.
This literally looks like one of the most amazing chicken
dishes I’ve ever seen!
Wow, sounds FAN-TASTIC!
I just did Faith’s smoky chili soup with lime and the lime
did make ALL the difference. The lively little soup just danced! I
adore all the flavours here and you are so right, Marla – this is
the perfect dish to go with all of the Superbowl nibbles… Of
course, it is not really a big deal up here. Some watch it – but I
am amazed at how the entire country seems to stop everything down
there and “watch the game”. There is nothing like it… 🙂
Valerie
I think I could put peanut butter sauce on just about anything and eat it. One of my all time faves!
Oh mi oh my Marla! This dish with the peanut sauce sounds
and looks amazing! If I wasn’t planning vegetarian chili for Sunday
I’d make a big batch of this to share. Yum, it’ll go on my rotation
very soon!
Mmm… love the recipe and LOVE the photography!!
mmmm! so tasty looking.
the recipe itself looks awesome…but the food
photography!! omg i am in heaven!!! i think i need to pay you to
come down to san diego and spend an afternoon with me teaching me
your tricks. And i promise to reward you with a girls nite out and
wine and chocolate…deal? 🙂
Averie: You are a total doll! With those kind compliments I would love to help you out. We would both learn loads together. Let’s connect via e-mail & set up a date soon, okay? xo PS: I might need to sleep over 😉
Omg just saw this reply…and yes, sleepovers after Girls Nights Out (after the photography session of course..haha) are totally welcome!
Since Hubby has grown to enjoy coconut milk…I’m now thrilled to try different recipes with it. Mix that with peanut butter…and surely a smile will be had at our table ;o)
Ciao for now,
Claudia
I love all the spice and herb combinations in this recipe, yummy!!
I make a similar coconut-peanut sauce for grilled chicken. But I have to say, who needs chicken, when a spoon will do! Love this combo 🙂
Marla I love all the colors and the flavors of this dish. It looks and sound delicious. And the peanut ,lime, and coconut sauce…yum!
And don’t worry I had to ask my husband who was playing in the game too. I could only remember one of the teams but not the other. I’m so not a NFL football fan but I have to admit I’ll watch the Superbowl.
Have a great weekend!
This looks wonderful. I just bought coconut milk so I think I’ll try this
The coconut lime peanut sauce sounds amaaaaaazing! I want to make it now so bad!
Marla, I just read coconut, lime, peanut sauce and I rushed over to your beautiful blog! I love love all of these flavors combined, my mouth is watering looking at your gorgeous pics! xoxo luv ya! 🙂
Marla, this look amazing! I can’t wait to try it. The photography is gorgeous!
Beautiful opening photo!
lime, coconut, cinnamon, cilantro–this contains so many of my favorite flavors!
Delicious, Marla! Coconut lime peanut sauce? Gah. I definitely need this to be a part of my life.
Love this and anything peanut related!
Hi Marla-This chicken looks fantastic! I lvoe your coconut
lime peanut sauce…mmm! I might have to make this for dinner
because I am now craving it! Lovely photos.;)
Marla, my husband would adore this! He’s all about the
peanut sauce!!
This looks and sounds amazing! I love the coconut-lime
combination…yum!
Such beautiful photos, Marla, as usual, and what a
wonderful, vibrant recipe. This looks so delicious, and I love your
use of all those different flavors. Thanks for sharing!
OMG, I lOVE those flavors! Coconut lime and peanut is
great, healthy combination!
This looks so good, I love the flavors.
I love these flavors. And though I rarely feature them at
SS. It’s honestly the kind of food I eat most days. GREG
That looks totally amazing. I love lime anything. Will definitely give this a try!
Your photos are amazing. Before I forget, what camera and lens do you use? Amazing! And the recipe looks fantastic. I think my kids would really enjoy it.
Liz: I shoot with a Canon EOS 10D. The past few months I have been shooting with my new 24-70 lens & I love it. This Coconut Chicken was shot with my wide angle lens, a 17-40. That thing needed a lot more post production work-it is a slower lens/less light. More info then you probably thought you would get! LOL
oh delicious!
Gorgeous photo Marla!
Great dish and FABULOUS photos.
This is a wonderful chicken dish, and those photos of it are gorgeous- the green just pops right out! Not much of a football game watcher here, but I enjoy any occasion to share a good time with friends. 🙂
I’m gonna be honest, I’m making chili on Sunday but I would much rather be eating this. Unfortunately, my father “doesn’t like peanut butter for dinner”. How I could have been borne of his loins…no idea. Instead, I think I may need to make this on Monday. To recover from the chili.
Joanne: Ha!! I am positive my Dad would be the same way. What’s with those men anyway? Thank goodness we have more common sense, better taste buds & much more adventurous personalities.
I love the flavors in this dish and especially the
presentation! I am becoming enamored with anything in a bite-size
form!
This looks so light and delicious. I might try using tofu instead of the chicken too. Love your web site–so pretty.
Susan: Thanks for stopping by. Tofu would be awesome with this sauce! I would brown it first in a little bit of sesame or coconut oil. All is good not matter what.
I can’t stop looking at this! It`s absolutely divine and I want to try this…
Have a great time,
Paula
Paula: Love that you can’t stop looking at this. Watch out if you make the recipe-it is so hard to stop eating too!
I love the flavors in it. Perfect for friend gatherings too! I love the greens on the top. So appealing!
First – beautiful tweaks to your site! I’m really liking it. Second – great chicken recipe, too. We’ve been craving Thai flavors recently, and this is right down that alley. I have this to try in the middle of the week – wonder how it’ll taste over a salad tossed with peanut oil and some rice vinegar?
We’re goin’ to a Super Bowl party this year… and responsible for providing the beer. 🙂
[K]
Kim: The beer is so easy! Sure, I would go ahead and make this chicken during the week. I have enjoyed it many times over a fresh salad (baby spinach.) I don’t even use additional dressing, but I like the idea of peanut oil & rice vinegar, or even toasted sesame oil.
Looks delicious! Your pictures are amazing!
looks fabulous! nice job!
That looks so divine Marla! I bet you get a lot of people wanting to come over to watch it at your place! 🙂
I love chicken with peanut sauce, but the addition of lime and coconut? Yummy! Although saying lime and coconut makes me want to sing that silly song…you put de lime in de coconut and shake it all around.
Gorgeous deliciousness Marla!
I love the combination of coconut, peanuts, and lime here,
excellent flavors, nice!
This looks delicious! Love the photo!
Wow this looks freakishly good. I love all those flavors, it reminds me of all my favorites that I get at thai restaurants- tom kha and pad thai. This is definitely being added to my list of things to try! And beautiful pictures by the way!
Amanda: Thanks so much for your sweet words. Yes, these flavors are reminiscent of quite a few Thai dishes. It is so fun to be able to take matters into our own hands instead of having to rely on restaurants (even though we love those too!) We adoreThai food over here!
Great work, This looks very delicious, thanks!
What amazing flavours on that chicken!
I think this recipe was made for me! Some of the best
flavor combinations!
This is a Keeper! Just made it for dinner and I am so glad! The only things I did was make a little more chicken and added more cayenne and some chili oil. (We like it hot!) and left out the cinnamon. My friend said the asparagus, while it seemed an odd addition to me, was a perfect addition. I agree that crunchy peanut butter is the best!!! Thank you for the recipe!
Jeane: I am so happy you enjoyed my peanut chicken recipe. Love that you went with the asparagus and were happy with the choice to use it. The chili oil is a great addition and can be added per serving – I would love it and my kids would probably think it was too spicy.
Thrilled this is a keeper:)
wow!! pictures are great, sharp and crisp!
congrats!
I don’t know how I missed this one. The flavors in this
pretty dish make it absolutely irresistible to me.
This looks super yummy! I’ve listed it in a lunch post on my blog, The Handmade Experiment. http://emilyflippinmaruna.wordpress.com/2011/06/06/must-make-monday-lets-do-lunch/
Thanks!
This looks delicious!! Do you think it would work with a different nut, something like almond butter?
Shari, I say go ahead & try the almond butter. I love all nuts so I can’t see how you can go wrong with that. You know what else would be tasty…cashew butter. Hmmm. Now I need to try both of those.
Now this I got to try on the weekend.
Marla, love chicken and peanut sauce. Other flavors in the dish sound great too!
Do you thinking substituting tofu for the chicken would be okay?
I believe an extra firm tofu would be great with this sauce! Let us know how it turns out 🙂
I love Thai food and this one looked very Thai… copied it and hope to make it soon. Thanks.
this is a firm favourite of ours, but i’m wondering if u can freeze it?
Hi Sue, I have not tried freezing it ~ we always finish it in a few days. Let me know how it goes if you do so. Glad to hear this recipe is a family favorite!
Hi Marla,
We tried this recipe and it was a hit with my family (especially my husband), but once I started to heat the sauce, it became really thick and sticky (I know normal for natural peanut butter). Have you ever had this happen and if so what should I add or cut back on to keep the flavours. Thanks for your help (and wonderful inspiring web-site)
Hi! How about trying to thin out the sauce with some more light, unsweetened coconut milk? You can also use a splash of water 🙂
Thank you! I roasted a spaghetti squash and had it with that. Perfect. Super YUM!
Great idea Maija ~ I love spaghetti squash. Perfect choice for Meatless Monday!
Wonderful recipe. I am glad I discovered it… despite the 2 year delay… better later than never 🙂
Could you make this in the slow cooker? Maybe pour the sauce over the chicken breasts and cook on low. Then shred the chicken at the end? Or will it overcook?
I am not sure Charlotte, I don’t use a slow cooker. You can try it and let us know!
i just made your chicken lime peanut sauce recipe and it is fantastic! wow! it tastes like i dish i would buy in a restaurant!! thanks!
Hi Kimberly ~ thanks for sharing such JOY with me 🙂 Glad to hear you enjoyed this recipe. Easier, healthier & more budget friendly than a restaurant eh?!
Hey there! This dish sounds incredible. I tried making something similar and the fish sauce creeped us all out. We still have it in our fridge but grimace at the thought of using it again. Is it essential? Is there something we can use instead? Thanks!
Good question…not sure what your sauce is. Also not sure how else to use it. Sorry 🙂
I was looking for a recipe that would allow me to use what I had in-house already. Had 1/2 a can of coconut milk, 1/4 cup of pb and, amazingly, I had frozen cut asparagus. This was soooo good. The only thing I would probably change is marinate the meat in the sauce for a while. Then cook the sauce down to make sure there is no bacteria. That would help marry the meat to the sauce. I made a cauliflower rice to go with it. Will definitely make this again.
That cauliflower rice sounds great! Thanks for sharing your feedback as well 🙂
This looks amazing!! I was wondering what to do with lots of limes & Thai food always is great. I’m officially a fan now. Thanks for breaking it down.
