We’ve been celebrating the warm weather here in the mountains (except for the fact that it’s currently SNOWING!) It’s the time of year to celebrate fresh veggies and one of our all time favorites is English Cucumbers. They are crisp, cooling, seedless and so tasty! Whenever we go to Japanese restaurants I always order this Asian Cucumber Salad as an appetizer. It’s really so quick and simple to make at home. You can easily duplicate the flavors at home…so there’s not reason not to have it all the time!
