I know. That’s a really long name for something that’s shaped like a cookie, puffs up like a muffin top & has crumb characteristics of a brownie.
Let’s not hesitate any longer. You need to bake these Brownie Peanut Butter Muffin Top Cookies. Now.
I think in some circles these are called brookies. That’s a combo cookie meets brownie. The muffin top element here has me waiver on a name.
These cookies are gluten free, I used Cup 4 Cup flour. Bakes up awesome every time I use it! The great thing about it is you can use the same measurements of AP flour if you choose to do that.
I also used coconut sugar, with less glycemic load then refined sugars.
Mini chocolate chips topping provides chocolate lovers even more happiness.
I took these with me on my hike yesterday…an uplifting treat! My kids loved ’em as an after school snack.
I’m thinking you should you should try these with vanilla ice cream. I sure will.

Would regular (not crunchy) PB be okay and do you use natural PB (no added sugar)?
I do use natural salted PB in my recipes & yes, no crunch would be wonderful too!
The tops are the best part of the muffin, and these look great! Plus, muffin and cookies together is a FAB idea! xx
