Brownie Peanut Butter Muffin Top Cookies

I know. That's a really long name for something that's shaped like a cookie, puffs up like a muffin top & has crumb characteristics of a brownie.

 1/2 cup crunchy peanut butter
 1/3 cup butter, softened
 1 cup organic coconut sugar
 2 eggs
 2 teaspoons vanilla
 1 3/4 cups gluten free flour
 1/4 cup cocoa
 1 1/2 teaspoon. baking powder
 1/2 teaspoon baking soda
 2/3 cup milk
 1/3 cup mini chocolate chips

Preheat the oven to 350 degrees F with the racks in the middle. Line 2 cookie sheets with parchment or silicone liners & set aside.

In a large bowl, combine 1/2 cup peanut butter and the softened butter. Beat well until combined, or mix well with a spatula. Add coconut sugar and beat/mix until light and fluffy. Add eggs and vanilla and beat/mix well.

In another bowl whisk together flour, cocoa, baking powder, and baking soda. Mix into peanut butter mixture; add milk, and stir until batter is smooth.

Spoon batter onto the cookie sheets (use a heaping tablespoon for each cookie) Press mini chocolate chips onto the tops of the cookies. Bake 15-20 minutes. Transfer to racks to cool.
