We just spent a few days in Devon, England and one of the absolute highlights was my aunt Suzanne’s farm to table cooking. Naturally, when she served this Butternut Squash Couscous Salad I quizzed her emphatically about the ingredient list. These are photos of her creation. I’ve embellished the salad with a light orange vinaigrette to dress it up just a bit more.
