  1. Marla this looks amazing and reminds me of a few blender soups I have that are either steamed carrots or sweet potatoes, with cashews and coconut milk. I love that flavor combo and your soup looks so smooth and creamy! Delish – pinned 🙂

    1. Thanks Averie…not only are these blender soups so easy to prepare but they taste amazing! Not to forget, super healthy too. Mmmmmm, now I’m craving a sweet potato version!

    1. Thanks Julie. Yes, this soup is super hearty & thick ~ cool thing is of folks want it less thick all they need to do is add some more broth. A soup built to satisfy all 😉

  2. I was thinking of making a carrot soup for dinner today but ended up making a quinoa one. Love the color and the flavors of this soup. Cumin and carrots go so well together. Will try out the recipe sometimes. Thank you for sharing.

  3. My girls and I tried this and loved it! We dumped the whole can of coconut milk in (we’re just like that) and didn’t regret it a bit. We were surprised at how filling it was. With bread and a little salad it was a nice, light dinner. Can’t wait to experiment with a curried version!

  4. I made this soup today, and it is delicious! However, I noticed the ingredients call for minced garlic, but nowhere in the directions say when or where to add them in. I added the garlic the same time as the ginger. Still came out awesome.
