Lately I’ve been really into maraschino cherries, like maybe too into them. Their bright red color beckons to me. They end up in my cocktails, sometimes yogurt & now in this fudge! I’ve been experimenting with all sorts of goodies for Valentine’s Day. This Cherry & Pistachio Fudge has been taste tested & approved by all! I’m not sure the last time I had a jar of marshmallow creme in my grocery basket. Or cherry Jello. There were lots of white chocolate chips too. I had seen some recipes online (ahem Shugary Sweets) that caught my eye & these ingredients set the stage for this fudge & some other new recipes I have to share! It was a whimsical trip to the grocery store to say the least. As usual I’m off & running to a few more adventures this week. Sadly no back country skiing. But I will be on the slopes of Beaver Creek later today to watch some of the ski championships & the closing ceremonies. Then I’m up bright & early to shoot a TV segment in Denver. Then I hop a plane to NYC to shoot another show. I will need to bring some of this fudge to keep my taste buds happy! My goal is to be back in Telluride on Thursday. Skiing and hanging with my family. So back to this joyful fudge! The marshmallow cream makes it light & fluffier than a denser fudge like this Chocolate Peanut Butter Fudge. Be sure to give it at least 4 hours & preferably 24 hours to chill in the fridge before you serve it. It does not stay too firm, so make sure not to keep it in sunlight. Store in your fridge when not munching on it. So off I go again! I must pack & get in the car stat.
