Waffles are one of our all time favorite breakfasts! Chocolate lovers, this one’s for you!
‘Tis the season for cornbread & we love it every which way! My kids are off from school today (parent teacher conferences) and I wanted to make the something special for breakfast. They woke up to these Chocolate Chip Cornbread Waffles and were more than thrilled!
Not only do the kiddos have a day off..but they get to play outside in a foot of fresh Telluride powder! Our ski resort opens the day before Thanksgiving & we are counting the seconds. Thankfully, a hefty base is settling in for a season of epic skiing. Telluriders are grinning from ear to ear!! We live for this stuff. The Moose turned TWO this weekend & he’s relaxing today from a long weekend of partying& playing in the snow with his brother Bo.
After the conferences (the kids get to attend with us) they will go sleigh riding in the golf course near our house. It’s a special bonding time for them & they love it so much! These waffles will give them all the energy they need to play hard. I’ll be sure to greet them after they return with some hot cocoa too.

I am going to order your waffle iron! I LOVE THE BUBBLES! For the once a year I make waffles, it’s a must!
And my kid has half-days of school the entire week for conferences! So every day they get dismissed at 12:30 this week. And then next week they have the whole week off. Things have changed since we were kids 🙂
