This pancake layer cake would be so pretty served at brunch parties, Memorial Day & July 4th holiday celebrations.
Or just go wild and serve it for breakfast.
When you decorate with blueberries, strawberries and raspberries it becomes an all-American themed treat.
Don’t forget to slather on gobs of Homemade Whipped Cream. You can also make Vegan Coconut Cream.
I took this beauty apart to slice it ’cause I knew I would make a huge mess if I kept all the layers together.
I bet  you are more skilled than I ~ you might be able to keep the layers together when you slice…
This is Amanda describes the Food Styling Challenge: “I asked 12 different fabulously talented bloggers if they would be up for a little challenge.  With $25 total and the common theme of Chocolate Cake, I was dying to see what they could produce.  I requested that they shop only second hand, but were able to buy and use any props within their budget.”
Well you guys know I am ALWAYS up for a creative challenge. I said yes immediately!!
There was somethin’ I had to consider: I have not had the time to master baking here at 10,000 feet. I figured pancakes are really cake (Let’s not fool ourselves here.) Layered with creamy whipped cream they become a cake. No joke. They are not as sensitive to the altitude.
Sooooo…where did I find my props? I head out to Durango frequently to see my surgeon (remember I had a torn ACL ~ well it’s now fixed.)
Durango is about 2 hours and 15 minutes from Telluride, so when i’m there I take time to shop and PLAY!
Carefully staying within my $25.00 budget I found these gorgeous beaded glass plates, cup and saucer.
And this kitty that i’m obsessed with.
Kitty also has a puppy pal ~ keep your eyes peeled for them in many photos.
