This fresh and light summer citrus salad is the perfect compliment to any vegan feast. Fruity and refreshing, healthy and light. Exactly what one needs when bikini season is calling. It’s got an adult twist with a hearty splash of Cointreau. I served this as dessert alongside our favorite phyllo pastry and crowd pleaser: M’hanncha Cake (Snake Cake) which can also be made with plant based butter if you are serving dairy free guests.
