Over here we LOVE flatbread and we’re super experimental with our toppings. Here’s five of our favorites, three that are great for lunch or dinner: Tex-Mex Flatbread, Thai Chicken Flatbread and Greek Salad Flatbread. A breakfast version, Ham, Egg and Cheese. And for dessert & to satisfy late night sweet cravings you must dig into these S’mores Flatbreads!

Here’s an awesome idea…..How about a FLATBREAD BAR at your next party? Spread out an assortment of base layers and toppings & have your guests build their own flatbread creations. All of these are baked at 400 degrees for 10 minutes, which makes things super easy. Run a blind taste test & host a contest for the winner! So fun for kids and adults.

What’s so cool about flatbread is you can be versatile with your toppings and base layers. For me, thin whole wheat tortillas are best. I’m all about tasting the toppings and a thin crispy edged crust. Pita, lavash and pizza dough work well too. The debate is still out on how flatbread is different from pizza. Some say a flatbread has no yeast. Others say flatbread offers them more diversity to experiment than pizza does. Some say there is no difference at all.

Tex-Mex Flatbread

Ingredients (layer from the bottom to the top)

  • whole wheat tortilla
  • salsa
  • chili beans
  • sweet corn
  • red, yellow pepper & onion sauté
  • for the sauté (splash of grape seed oil ,1/2 cup sliced onions, 1/2 cup each sliced red & yellow bell pepper, pinch chili powder)
  • mexican blend shredded cheese
  • guacamole
  • sliced green onion

Directions

  1. Pre heat oven to 400 degrees with the rack in the middle. Spray a sheet pan with cooking spray.
  2. In a sauté pan, add a splash of grape seed oil & cook sliced onions until they start to sweat. Add the red & yellow bell pepper. Cook a few minutes. Add some chili powder, salt and pepper. Continue to cook until soft.
  3. Top flatbread with salsa, beans, corn, red, yellow pepper & onion sauté and cheese.
  4. Bake at 400 degrees for 10 minutes.
  5. Remove from the oven and top with guacamole and green onion.

Thai Chicken Flatbread

Ingredients (layer from the bottom to the top)

  • whole wheat tortillas
  • Thai red chili turkey sauté:
  • for the sauté (1/2 cup diced onion, grape seed oil, 2 cloves garlic, minced, 1 pound ground turkey, 1/2 cup coconut milk, 2 tablespoons Thai red curry paste)
  • mozzarella cheese
  • green onion
  • fresh cilantro

Directions

  1. Pre heat oven to 400 degrees with the rack in the middle. Spray a sheet pan with cooking spray.
  2. Heat a splash of grape seed oil in a pan and sauté onions for a few minutes to soften. Add  minced garlic cook another minute or so. Add the ground turkey and cook about 6 minutes or until the turkey is almost cooked through,
  3. Add the coconut milk and Thai red curry paste. Stir to combine the flavors and cook a few more minutes until the turkey is cooked through.
  4. Lay your tortillas on the baking sheet and top with the turkey sauté and mozzarella cheese.
  5. Bake for 10 minutes.
  6. Remove from the oven and top with cilantro and green onion.

Tex-Mex Flatbread

Ingredients (layer from the bottom to the top)

  • whole wheat tortillas
  • olive oil
  • feta cheese, crumbled
  • sliced red onion
  • cherry tomatoes, halved
  • marinated artichokes, quartered
  • kalamata olives, halved
  • salad greens

Directions

  1. Pre heat oven to 400 degrees with the rack in the middle. Spray a sheet pan with cooking spray.
  2. Pour some olive oil over the top of the tortilla.
  3. Top with feta, red onion and tomatoes and marinated artichokes.
  4. Bake for 10 minutes.
  5. Remove from oven and top with salad greens and another splash of olive oil.

Ham, Egg and Cheese Flatbread

Ingredients (layer from the bottom to the top)

  • whole wheat tortillas
  • shredded cheddar cheese
  • sliced ham
  • fried eggs
  • black pepper

Directions

  1. Pre heat oven to 400 degrees with the rack in the middle. Spray a sheet pan with cooking spray.
  2. Layer the tortilla with cheddar cheese and ham.
  3. Bake for 10 minutes,
  4. While the flatbread is baking, fry the eggs in a pan with some butter or olive oil. (one egg per flatbread)
  5. Remove flatbread from the oven and top with the fried egg and some cracked pepper.

S’more Flatbread

Ingredients (layer from the bottom to the top)

  • whole wheat tortillas
  • mini marshmallows
  • chocolate chips
  • crumbled graham crackers

Directions

  1. Pre heat oven to 400 degrees with the rack in the middle. Spray a sheet pan with cooking spray.
  2. Layer the tortillas with mini marshmallows (about 3/4 cup) and chocolate chips (about 1/4 cup)
  3. Bake for 10 minutes.
  4. Remove from the oven and top with graham cracker crumbles.
