We are just about to wrap an epic ski season here in Telluride, Colorado and my goal is to start cooking and baking way more! I get swooned easily by the slopes and whoosh, the days go by quickly and I don’t get nearly as much done as I would like. Great news is I had a serious craving for pop tarts the other day and these delicious Homemade Strawberry Pop Tarts came to be. They didn’t last long in our house and they got a unanimous thumbs up from all.
This recipe calls for a scratch pastry crust (trust me you will never want store bought dough again.) The real-fruit strawberry filling is to die for! It makes a whole lot and the extra can be used over pancakes, stirred into plain yogurt or oatmeal. It’s also great as a topping for vanilla bean ice cream.
