What?? Nachos made with thinly sliced potatoes instead of corn chips? Yup! Until now I had never had such a thing. Now I am hooked. Thanks to my great pal Gaby Dalkin from What’s Gaby Cooking and her new cookbook Absolutely Avocados ~ I now have plenty of new recipes to explore. All which use one of the the best ingredients on earth….avocados!

Are you a fan of avocado? Did you know that this creamy fruit (not vegetable) can be used in all kinds of sweet and savory year-round recipes? Sometimes you can tell right away that it’s in a recipe, other times it’a an ingredient that acts a bit more stealth.

In the case of these Irish Nachos, mashed avocado is the crowning star….

I chose this recipe to share with you because it jumped out at me…leapt off the page and begged me to re-create it in my kitchen.

What makes Irish Nachos so special? First of all they are perfect for breakfast, brunch, lunch, dinner or any time at all. The potatoes are sliced real thin and baked until soft in the oven. While that’s doin’ you sizzle up some finely chopped onions and bell peppers. Then you slap bacon in that very same pan…nuff said right?

Oh wait it gets better ~ then you mash up the avocado and make an almost guacamole kinda deal. You set the avocado mash & the crispy, smoky bacon aside…for just a few minutes…..don’t worry.

And then you layer the potatoes, veggies with a big fist full of cheddar cheese. Set the skillet back in the oven ~ let everything get all melted and gooey. Pull it out & top with the bacon and avocado.

    I’ve been doing a ‘dumbed down’ version of this for years. In high school home ec (egads! Am I that old?) one of the things we learned to make was Potato Nachos. Just thin slices of potato nuked until tender, topped with salsa & cheese and nuked until the cheese melts. I rather like the look of this more grown up version. I’ll have to give it a try.

    I think I should win just because she has my name AND even spells it like me! She must be the coolest person ever …scratch that…she wrote a cookbook about avocados, she IS the way cooler version of me.
    I’ve been going through nuts like crazy lately so even though it’s simple, I’d make her spicy roasted nuts.

    Best Irish Nachos I’ve had are made with corned beef. You can use leftover corned beef or go get some lean deli sliced. Just cut up in small pieces, crisp up a little bit and add. I’ve had these many times at this Irish pub in my town. You’ll love them. Oh, no bell pepper either.

    I just made these tonight for my girlfriend and I and we loved it!!!!! Made a few changes though…. we didn’t have a cast iron skillet so we just fried them in our little deep fryer. We also just bought a container of guacamole from the store and used fresh green onions from the garden! We also just layered all of the ingredients on our plates instead of cooking them all together in the oven. We didn’t use any seasonings just all natural ingredients and it was sooo yummy!!! Definitely making this a new add on to our dinner rotation!!! Thanks a lot for this awesome Gluten free recipe!! So grateful to find this! <3
